Courgette, chicken and tomato pasta: marinade chopped chicken in juice of 1 lemon, oregano, basil, pinch thyme, S&P and olive oil for 30 mins. Meanwhile, roast halved cherry toms and slices of courgette in olive oil, oregano, salt and pepper. Fry red onion and garlic, add chicken with marinade, and sundried toms (maybe a bit of chili). Mix all together with boiled pasta, S&P to taste.
