Place 1 medium head green cabbage, cut into 1-inch-thick rounds, in a single layer on sheet and brush with 2 tablespoons oil. LOW CARB CHIIMICHANGA Yummy, cheesy chimichangas. Ingredients: * 2 - 4 large low carb tortillas * 1 pound of ground beef * LindaSue's Seasoning for Tacos * 2 - 4 ounces of shredded cheddar cheese * 1 - 2 ounces of cream cheese * canola oil * chopped tomato and green onion for garnish (optional) * 1 ounce of cream cheese and 1 ounce cheddar cheese to melt on the top of the chimichangas(optional) How To Prepare: Brown the ground beef in a skillet and drain the oil from the pan. Add the taco seasoning to the ground beef (Use just enough for one pound of ground beef. I used Lindasue's Seasoning for Tacos...the link is at the bottom of my post). Add a bit of water to the skillet and stir the mixture over medium heat for a few minutes until the seasonings are incorporated and the water has evaporated. Take a tortilla and at one end, add 1/4 - 1/2 pound of meat, one ounce of shredded cheddar and 1/2 ounce of cream cheese. This will create a VERY full tortilla. Carefully roll up the tortilla like a burrito or an egg roll making sure that the ends are tucked inside (if the tortilla is too full and hard to roll, you might have to remove some meat). Smear the inside of the exposed edge with cream cheese to seal the chimichanga up tight. Then fill, roll and seal the remaining tortillas the same way. Put about a quarter of an inch of canola oil in the bottom of a skillet and heat it up. Add the chimichangas to the hot oil with the exposed edge side up. Carefully fry the chimichangas and turn them so that they brown on more than one side. Drain on paper towels. The chimichangas are now ready to eat as is. OR, heat up your oven to approximately 450 degrees. Smear the tops of the chimichangas with a small amount of cream cheese and sprinkle a small amount of shredded cheddar on top. Place the chimichangas on a cookie sheet and bake until the cheese is melted. Garnish with chopped tomato and minced green onions and serve. These are so good...crisp, crunchy, cheesy and all melted inside...ooolala. You could experiment with endless filling ideas. For large chimichangas and for the carb counts below, I used La Tortilla Whole Wheat Large Tortillas. I have also made small chimichangas using Mama Lupe's Whole Wheat Tortillas...if you use Mama Lupe's, adjust the carb counts accordingly). Number of Servings: 2 - 4 (4 if you use 1/4 pound of meat per tortilla or 2 if you use 1/2 pound of meat per tortilla). Carbs per serving - include all nutritional information if known: The carb count for one chimichanga using Large La Tortilla Tortillas, 1/4 pound of meat and with no optional items: Approximately 7.5 net carbs

Here’s your fix… “JUST ONE” PEANUT BUTTER COOKIE Next time you are in the need for a quick – and I mean QUICK – dessert from the oven, but don’t want a dozen laying in wait, this will be perfect. This is an old favorite…been around forever, but worth repeating. I’ll give the recipe for the whole batch in parentheses , and they freeze great, so save yourself some effort! But for a fast work-out of your toaster oven this can’t be beat! ~~~~ 1 tablespoon peanut butter (1 cup) 1 tablespoon Splenda Granular or Whey Low Granular (1 cup) 1 teaspoon egg substitute (1 egg or 1/4 cup egg substitute) One drop vanilla extract (1 teaspoon) . Preheat oven to 325 degrees. Combine peanut butter, sugar sub, egg, and vanilla in a small bowl. Drop dough by 1 tablespoons onto ungreased or parchment lined baking sheet. Crisscross with a fork dipped in splenda. Bake for 8-10 minutes or until set. Allow to cool for a couple minutes on baking sheet and then remove to wire rack to cool completely. You can add chocolate chunks, extra peanuts, unsweetened coconut…anything, really. Or make the cookies very thin and spread sugar free jam on the bottoms so that you can sandwich them together. Egg Muffins Revisited Again (Makes 12 muffins, recipe created by Kalyn with inspiration from The South Beach Diet book. 15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins or individual silicone cups. You can use less egg yolks and more egg white if you prefer.) 1-2 tsp. Spike Seasoning (optional, if you have food allergies or don't have Spike, use any type of seasoning blend that's good with eggs.) 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat) Optional, but highly recommended, 3 green onions diced small. Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content) Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep more than a week in the refrigerator. Egg muffins can be frozen and reheated, but I like them best when they are just refrigerated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.
