Easy Breakfast Casserole. Made it this morning and it was delicious. Substituted sausage for the ham and it still worked well. It only needed 40 minutes of baking in my oven, and I used extra cheese on top and toasted it before serving.

The world’s best chicken! 4 boneless, skinless chicken breasts, 1/2 cup dijon mustard, 1/4 cup maple syrup, 1 tablespoon red wine vinegar, salt & pepper. Preheat oven to 425 degrees. In a small bowl, mix together mustard, syrup, and vinegar. Place chicken breasts into 9×13 greased baking dish. Pour mustard mixture over chicken. Make sure each breast is coated. Bake for about 30-40 minutes. Season with chopped rosemary.

TRIED: Loved the chicken taco soup (used ginger ale instead of beer though the chicken), brown sugar chicken wasn't a favorite...but not horrible!! Can say that we would use recipes as written for one meal. But smaller families could possible make 2 meals per recipe. not sure about others yet...will update as we try em!!
