Bang Bang Shrimp Pasta - This was amazing! I used coconut oil in place of olive oil second time (will keep this change). I subbed ff greek yogurt for the mayo. It was still good but not as magical. Next time I will make it half yogurt and half mayo and compare results. (Half mayo and half ff greek yogurt was good. I'm keeping that change.) I use stir-fry rice noodles. For 4 people, double recipe. ~S

Baked Monte Cristo Sandwiches. Simple recipe, easy to make. Used sprinkle cheese instead of slices, and melted butter instead of egg (got less brown on top). Also left off the sweet part (no sugar dusting or syrup). Easy lunch to make ahead of time.
