cucumber avocado summer rolls Ingredients: Juice from 1/2 lime2 Tbs. rice bran or canola oil1 Tbs. rice vinegar1/2 tsp. Dijon mustard1/2 tsp. soy sauce1 tsp. brown sugar2 Haas avocados20 rice paper rounds, 6 or 8 inches in diameter10 green lettuce leavesLeaves from 1 bunch fresh basilLeaves from 1 bunch fresh mint2 carrots, coarsely shredded1/2 English cucumber, cut into thin strips Directions: In a small bowl, stir together the lime juice, oil, vinegar, mustard, soy sauce and brown sugar until the sugar dissolves; set aside. Halve, pit and peel the avocados, and then cut them into 1/2-inch dice. Place a wide, shallow bowl of warm water on a work surface. Lay a clean kitchen towel next to the bowl. Dip 1 rice paper round into the water for a few seconds to soften, then lay it flat on the towel. Dip a second round into the water and lay it directly on top of the first one. Using another towel, pat the top of the rice paper dry. Center a lettuce leaf on top of the stacked rice papers. Starting about one-third in from the edge closest to you, arrange a few of the basil and mint leaves in a line across the lettuce. Top with a small row each of the carrot, cucumber and avocado; be careful not to overstuff the roll. Lift the bottom edge of the rice paper up and over the filling and then roll once to form a tight cylinder. Fold in the sides of the rice paper and continue to roll the paper and filling into a tight cylinder. Set aside, seam side down. Repeat with the remaining rice paper and filling ingredients to make 10 rolls. Cut each roll in half crosswise and arrange, cut side up, on a platter. Broccoli and cheese Stuffed tilapia Ingredients: 4-ouncefresh or frozen skinless sole, flounder, or other fish fillets, about 1/4 inch thick 1 cupfrozen cut broccoli, thawed 1 beaten egg 1 8-ounce containersoft-style cream cheese with chives and onion 1/4 cupgrated Parmesan cheese 3/4 cupherb-seasoned stuffing mix 2 tablespoonsmilk 2 tablespoonsdry white wine Instructions: 1. Thaw fish, if frozen. Rinse fish and pat dry with paper towels. For stuffing, drain broccoli, pressing out excess liquid. Combine egg, half of the cream cheese, and the Parmesan cheese. Stir in broccoli and stuffing mix. Spoon one-fourth of the stuffing onto an end of each fillet. Roll up, securing rolls with wooden toothpicks. Place fish in a greased 2-quart square baking dish. Bake, covered, in a 350 degree F oven for 30 to 35 minutes or until fish flakes easily with a fork and stuffing is hot. 2. Meanwhile, for sauce, in a small saucepan cook remaining cream cheese, milk, and wine until heated through, stirring often. Serve sauce over fish. Makes 4 servings.

Baked Mozzarella Sticks: 1 string cheese 1 c panko 1 c Italian bread crumbs 1 c flour 2 eggs 2 Tbsp milk 2 Tbsp butter cut string cheese in half. Put panko & bread crumbs in bowl & mix together. Beat eggs & milk together. Put flour in a bowl - roll each piece of cheese in the flour. Then dip in egg mixture, then roll in bread crumbs. Place cheese sticks in freezer for 30 mins. then place them on a baking sheet. Melt butter- drizzle it over the cheese sticks. Bake at 400°F for 8-10 minutes.
