Seven Minute Frosting Ingredients 1 3/4 cups sugar 1/4 cup water 2 tablespoons light corn syrup 6 large egg whites, room temperature 1/2 teaspoon pure vanilla extract Directions Heat 1 1/2 cups sugar, the water, and corn syrup in a small saucepan over medium heat, stirring occasionally, until sugar dissolves. Raise heat to medium-high, and bring to a boil. Cook, washing down sides of pan with a wet pastry brush to prevent sugar crystals from formiing, until syrup reaches 230 degrees on a candy thermometer. Once syrup reaches 230 degrees, remove from heat immediately. Meanwhile, with a mixer on medium speed, whisk egg whites to soft peaks. Whisk in remaining 1/4 cup sugar. Reduce speed to medium-low, and pour syrup into egg whites in a slow, steady stream down the side of the bowl. Raise speed to medium-high, and whisk for 6 minutes. Add vanilla; whisk until soft peaks form, about 1 minute. Use immediately.

Crock Pot Enchiladas Crock Pot Enchiladas 8 servings 1 pound lean ground beef 1 tablespoon oil 1 small onion, chopped 1 green bell pepper, chopped 1 can (15 ounces) Ranch Style beans, drained 1 can (10 ounces) rotel tomatoes mild, drained 1 teaspoon chili powder1/2 teaspoon salt 1/2 teaspoon ground cumin 1/4 teaspoon pepper 1/4 teaspoon garlic powder 2 cups (8 ounces) shredded colby jack cheese 8 flour tortillas 1 can (15 ounces) red enchilada sauce Cook beef over medium heat until done; drain. Meanwhile saute onion and bell pepper in oil until tender. Add onion and pepper to beef. Stir in beans, tomatoes, chili powder, salt, cumin, pepper and garlic powder. In a slow cooker place two tortillas side by side, overlapping if necessary. Layer with a forth of the beef mixture and a fourth of the cheese. Repeat layers three more times. Pour enchilada sauce over all. Cover and cook on low for 2 to 2-1/2 hours or until heated through. Another meal for busy nights when we all are needing to eat supper at different times. Homemade Krispy Kremes — Yes, this is the actual recipe! Donut Recipe: 3 tbsp milk 3 tbsp boiling water 1 tsp dry active yeast 8 oz all purpose flour (a little under 2 cups - I recommend you measure and weigh. See my note above)1 1/2 oz sugar (about 3 tablespoons) 1 egg 1 oz butter, cold to room temperature (just don't melt it, okay?) dash of salt Enough oil to cover the bottom few inches of a wok, or a deep fryer. Directions: In a large measuring jug, combine the milk and boiling water. Add a teaspoon of the sugar and the yeast. Stir it gently, then leave it in a warm place for the yeast to activate (aka foam).In a large mixing bowl, combine the flour, the rest of the sugar, and the salt. Cut in the butter using your fingers or a pastry blender, until it resembles crumbs.Add the egg (give it a quick beat) and yeast mixture to the flour mix, and mix into a smooth dough. This usually takes about 5 minutes of mixing.Turn the dough out onto a lightly-flouredcounter and knead for about 5 to 10 minutes—it should feel springy and little bubbles should form under the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let rise for about an hour until double in size.Once risen, place the dough onto the counter and cut it into 4 pieces. One piece at a time, stretch it into a long rope about an inch to an inch and a half wide. Cut strips about an inch long, ball em up with your hands, and place them on a baking tray or wire rack to wait.Cover the doughnuts holes with a cloth to rise while you heat the oil to 375F.Place the doughnuts into the oil and fry until golden brown on each side, about 2 minutes. Be sure to fry only a few at a time so they don’t overcrowd and stick together.Drain on a paper towel or wire rack over a cloth, before glazing them. Be sure to glaze them warm, or else they won’t get that delicious coverage! Glaze: 1/3 cup butter 2 cups confectioners' sugar 1 1/2 teaspoons vanilla 4 tablespoons hot water or as neededA brief note: I recommend a scale, as not all flours (and cup measurements) are made equal. 2 cups of my Canadian flour in my Canadian cups on my scale might be more or less than yours. If you don't have a scale, start at 1 1/2 cups and work your way up from there.

With these cupcakes, every single one has all the yummy qualities of those corner pieces. Just cut some wonton wrappers into circles using a glass as an outline. Ingredients 1 cup marinara sauce 3/4 pound ground beef 12 wonton wrappers 8 ounces shredded mozzarella 3 ounces Parmesan cheese 4 ounces Ricotta cheese (optional) basil for garnish Directions 1Preheat oven to 375 degrees. Spray muffin tin with cooking spray. 2Brown beef and season with salt and pepper. Drain.3Cut wonton wrappers into circle shapes using a biscuit cutter or using the top of a drinking glass. You can cut several at a time.4Reserve 6 tablespoons Parmesan cheese and 6 tablespoon mozzarella for the top of you cupcakes. Start layering your lasagna cupcakes. Begin with a wonton wrapper and press it into the bottom of each muffin tin. Sprinkle a little Parmesan cheese, Ricotta cheese, and mozzarella cheese. Top with a little meat and marinara sauce. Use around 1-2 teaspoons of all the ingredients depending on your personal preference. 5Repeat layers ending with marinara sauce. Top with reserved Parmesan and mozzarella cheese.6Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove use a knife to loosen the edges then pop each lasagna out.7Garnish with basil and serve

Homemade Marshmallows: I LOVE them. They didn't whip up as stiff as I thought they would, and I thought they were hopeless. But after I let them set, they were perfect! They freeze well too, so I just grab a couple out when I make cocoa for the boys... It cools their drinks nicely! :) Will definitely do these again!
Homemade Marshmallows Ingredients: Powdered (confectioner's) sugar 3 1/2 envelopes (2 tablespoons plus 2 1/2 teaspoons) unflavored gelatin 1/2 cup cold water 2 cups granulated sugar 1/2 cup light corn syrup 1/2 cup hot water 1/4 teaspoon salt 3 egg whites, room temperature 2 teaspoons pure vanilla extract Preparation: Line the bottom and sides of a 13- by 9-inch baking pan with plastic wrap; oil and then generously dust bottom and sides with some powdered sugar. In large bowl of an electric mixer, sprinkle gelatin over the 1/2 cup cold water; let stand to soften. In a large, heavy saucepan, cook sugar, corn syrup, hot water, and salt over low heat, stirring until sugar is dissolved. Increase heat to medium-high and boil mixture approximately 4 to 5 minutes, without stirring, until a candy or digital thermometer registers 240°F or syrup reaches the firm-ball stage (when a small amount of syrup is dropped into very cold water, it forms a ball that holds its shape when pressed); immediately remove from heat. Pour hot sugar mixture over gelatin mixture, stirring until gelatin is dissolved. Beat mixture on high speed approximately 5 to 6 minutes or until white, thick, and nearly tripled in volume. In another large bowl with clean beaters, beat whites until they just hold stiff peaks; beat egg whites and vanilla into sugar mixture until well combined. Pour mixture into prepared baking pan; sift 1/4 cup powdered sugar evenly over top. Refrigerate marshmallow, uncovered, until firm (at least 3 hours or up to 1 day). Run a thin knife around edges of pan and invert pan onto a large cutting board; remove plastic wrap. Sprinkle top with 1/4 cup powdered sugar. With a large knife, trim edges of marshmallow and cut marshmallow into roughly 1-inch cubes. NOTE: To cut into even 1-inch squares, use and ruler and toothpicks to mark it every 1 inch. Lightly grease the blade of your knife with vegetable shortening. Cutting down firmly with the full length of the blade, cut the marshmallow into 1-inch cubes. Sift additional powdered sugar over the tops if necessary. NOTE: The powdered sugar helps to keep the marshmallows from sticking together Store either, covered with plastic wrap, in the refrigerator, or in an airtight container. Makes about 80 marshmallows.
