How to Freeze Fresh Summer Vegetables

31 Things you can freeze to save time and money: Cheese, breads and sweet breads, fruit, rice, pies, corn, tomatoes (roasted), pasta, flour, pesto, mashed potatoes, cookie dough, soups & chili, broth & stock, sandwiches, potato chips, crackers & pretzels, milk, juice, buttercream frosting, tomato paste, diced veggies, bread dough, eggs (cracked, no shells) shredded chicken, lemon/lime juice and zest, herbs (in olive oil), marinated meat, casseroles, fish sticks, hamburger. When buying fruit and veggies, always soak them in a 1:4 ratio of vinegar and water to help remove toxins and pesticides. Leave them soaking for up to an hour, longer with nonorganic apples. At the end of the bath, sometimes you can even see cloudy like stuff in the water from the skins and waxes, and dirt on the bottom. Works awesome! Once I did this to blackberries and they were good for 3 WEEKS! That's unheard of with berries & water. The vinegar is KEY :)

Tomato Paste Saver: Most recipes call for only a small portion of tomato paste -- you use a tablespoon or two, and the rest invariably goes to waste. To save the remainder: Carefully open both ends of the can with a can opener. Remove one metal end, and discard it. Leave the other in place. Wrap the entire can in plastic wrap, and freeze overnight. The next day, use the metal end to push the frozen paste out the open end. Discard can, tightly rewrap unused portion, and store in freezer up to 3 months, slicing off just as much as you need each time you cook. (found here: www.marthastewart...)

Never buy a box again: Brownie Mix $0.30 /mix. 1 Cup Sugar, 1/2 Cup Flour, 1/3 Cup Cocoa, 1/4 tsp Salt, 1/4 tsp Baking Powder. Add: 2 Eggs, 1/2 Cup Vegetable Oil, 1 teaspoon Vanilla. Bake @ 350 degrees for 20-25 minutes.
