A Taste of Portugal! Yum!! Portuguese gratinated clams on red cabbage...Gratinating is a very interesting way of preparing food – it descends from the French cuisine and consists in cooking in a savory juice or sauce until this last ones are absorbed and a crisp surface appears on a dish. You can gratinate almost everything, however, it proves perfect especially in case of fish and frutti di mare.

I call this version "new-style" because the kale is cut into thin strips and is cooked only until crisp-tender, which differs from the more traditional version. Ines, my Portuguese friend back home, would be proud. Serve this with crusty bread alongside.Recipe courtesy of Emeril Lagasse, "Emeril 20-40-60 Fresh Food Fast," HarperStudio Publishers, New York, 2009, courtesy Martha Stewart Living Omnimedia, Inc. celebrate-summ
Brewing coffee for 300 years, no wonder Portuguese coffee tastes so good! - via Salt of Portugal The Portuguese produce wonderful coffee.“It tastes like cognac,” an American friend said, admiring the smooth taste of Delta coffee. This coffee is so good that Delta exports it to Brazil. All so that we can wake up in...
