Pan-Seared Chicken with Balsamic Cream Sauce, Mushrooms and Onions! YUMM! Ingredients: 1 1/2 lb. Bonesless Skinless Chicken Breasts, 1/2 of a Large Onion - Thinly sliced, 1 Package of Whole Mushrooms - Halved, 1/2 Cup of Chicken Broth, 1 Cup Heavy Cream, 5 Tbs. Butter - Divided, 1/2 Cup of Parmesan Cheese, 2 Tbs. Balsamic Vinegar, Salt and Pepper. Directions: Saute onions over medium heat in 2 Tbs of butter until they are nice and caramelized - About 15 Minutes. When they are a nice golden brown, remove from the heat and set aside. In a separate pan, heat the remaining 3 Tbs. of butter over medium-high heat. Place the chicken breasts in the pan. Brown on both sides, remove from the pan and set aside (Note - they will not be all the way cooked at this stage). De-glaze the pan with the chicken stock. Use a rubber spatula to make sure you get all the chicken bits and butter off the pan. This helps to flavor your sauce. Add the heavy cream and the balsalmic vinegar and stir. Add mushrooms and a little S, reduce heat to low and let simmer for 10 minutes. Add the chicken back to the pan, turn heat back up to medium and saute until the chicken is cooked all the way through. About 10-15 minutes. Remove chicken breasts from the pan and plate. Add the Parmesan and caramelized onions to the sauce and keep stirring until the cheese is completely melted in. Cover the chicken breasts with the sauce, SERVE AND ENJOY!!!

Grape Salad -All recipes.com A dessert salad (made the day before, the brown sugar makes the sauce taste like caramel) site allows change of serving/ingred's. 4 pounds seedless green grapes 1 (8 ounce) package cream cheese 1 (8 ounce) container sour cream 1/2 cup white sugar. Wash & dry grapes. In large bowl, mix together the cream cheese, sour cream, sugar & vanilla. Add grapes & mix until evenly incorporated. Sprinkle with brown sugar & pecans, mix again & refrigerate until serving.

This is a must-have fruit salad at all holidays! My mom has always called it "pink panther poop!" Cherry Salad: 1 can Cherry pie filling (usually only comes as 24 oz), 2/3 can of Sweetened Condensed Milk (usually only comes as 14 oz) (I use it all!), 1 can of Crushed Pineapple (usually only comes as 8 oz), 2/3 bag Mini Marshmallows, 1 cup Chopped Pecans (optional), 16-24 oz Cool Whip (personal preference richer flavor or stretch for more people).

Greek Chicken Make the tzatziki sauce the day before and marinate the chicken the day before. Some Greek tidbits from Ellie at Ellie says Opa: 1) Gyro is pronounced Yee-Roh not Jy-Roh. But Jy-Roh is so much more fun to say. 2) Traditional pitas don't have a pocket in them. Chicken Gyros Source: adapted from Annie-Eats Tzatziki sauce: 1 cup plain Greek yogurt 1 regular cucumber, peeled and seeded 1 teaspoon minced garlic 1 teaspoon white wine vinegar Salt and pepper Squeeze of fresh lemon juice Extra virgin olive oil For the chicken: 2 teaspoons minced garlic Juice of 1 lemon (2-3 Tablespoons) 2 teaspoons red wine vinegar 2 Tablespoons extra virgin olive oil 2 heaping Tablespoons plain Greek yogurt 1 Tablespoon dried oregano Salt and pepper 1 1/4 lbs. boneless, skinless chicken breasts To assemble: Pita bread Fresh tomatoes, seeded and diced Red onion, sliced thin Directions: Shred the cucumber or chop in food processor. Wrap in a towel a squeeze to remove as much water as possible. Mix together the yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to meld. To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour. Cook the chicken as desired, either in the skillet or with the broiler. Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips. Heat pitas. Top with chicken, tzatziki sauce, diced tomatoes and sliced onions. Serve immediately.

Roasted Balsamic Green Beans with Mushrooms & Parmesan ~ 8 oz crimini or other mushrooms, sliced; 1 lb fresh green beans, preferably thin French style beans; 1½ TBsp olive oil; 1 TBsp balsamic vinegar; salt & pepper; 2 TBsp finely grated parmesan cheese ~ Marinate beans & mushrooms in the vinegar & oil in a zippered bag. Spread out on cookie sheet and roast 20-30 minutes at 400°. Sprinkle with salt & pepper to taste & Parmesan.

Pumpkin Cheesecake Muffins! These were delicious but FYI if you double the recipe, no need to double the filling or topping parts, only the actual cupcake part! I've got more cream cheese filling leftover than I know what to do with! Also, I gave the cream cheese filling and cupcake batter a quick stir after putting them in the cupcake tins, otherwise the filling doesn't mix in when baking.

EASY SPICED PUMPKIN MUFFINS What you’ll need: 1 box Spice Cake mix 1 15 oz. can pumpkin (not pumpkin pie filling) 1 1/2 tsp. pumpkin pie spice Directions: In a large mixing bowl, mix together the cake mix, pumpkin, and pumpkin pie spice. Bake according to directions on the cake mix box. Seriously! That’s it!! These muffins are so delicious and they stay moist for days! Bonus: they’re weight watchers friendly! Hellllooo skinny jeans!

Gwyneth Paltrow's No-Fry Fries, just cut up your potatoes and place them in a bowl of cold water, then dry them off and toss them with olive oil, place them on a cookie sheet and sprinkle with sea salt, then bake at 450 for about 25 minutes, turning occasionally. Side dish, lunch/supper/dinner
