Instead of one box of stock, I used Veg and chick. Two cans of diced seasoned tomatoes and mushrooms. Extra garlic, smoked paprika, garlic and onion seasoning salt. I let simmer on low for an hour before adding tortellini and spinach. Deeeeeelish!!!!
