Made it for my coworkers and they wouldn't stop talking about it. I added a pound of sausage and only did 1.5lbs of hash brown potatoes. I also followed the suggestion of salt and peppering each potato layer and used frozen chopped onion.

Ingredients: 1) 3 – 5 lbs frozen skinless, boneless chicken breasts (2) 12oz bottle Franks Red Hot Wings buffalo sauce (3) 1 packet Hidden Valley Ranch dressing mix Directions: 1. Place frozen chicken breasts into crockpot, pour buffalo sauce over chicken. Sprinkle ranch mix over top. Cover with lid and cook on low for about 5 hours. Shred the chicken with two forks and it should just fall apart. DONE!

Brisket Tacos (crock pot). These are out of this world! Ingredients Brisket ◦3 lb brisket ◦Salt ◦Ground black pepper ◦1 Tbsp chili powder ◦3 cloves garlic, minced ◦16 oz Dublin Dr. Pepper (made with real sugar) Mango Barbecue Sauce ◦1 1/2 Tbsp olive oil ◦1 medium yellow onion, chopped (about 3/4 – 1 cup) ◦1/2 cup ketchup ◦2 Tbsp lemon juice ◦1 1/2 Tbsp Worcestershire sauce ◦1 1/2 tsp Creole (spicy brown) mustard ◦Salt ◦Pepper ◦1/4 cup mango chutney Quesadillas ◦8 8-in flour tortillas ◦8 oz brie, thinly sliced ◦1 cup monterrey jack, shredded ◦olive oil or cooking spray, to brush tortillas ◦cilantro, for garnish (optional) Instructions 1.To make the brisket: Rub the meat with salt, pepper, chili powder, and garlic. 2.Place brisket in the crockpot and pour the Dr. Pepper over the top. 3.Cook on low for 8 hours. 4.Remove from the crockpot and let rest for 15 minutes. 5.Slice against the grain (1/8-1/4 inch thick). 6.To make the barbecue sauce: Heat olive oil in a 2-qt sauce pan. 7.Saute onions for 5 minutes. 8.Add garlic and cook until fragrant. 9.Stir in the remaining ingredients and simmer for 5 minutes. 10.Transfer to a blender or food processor and run until smooth. 11.To assemble the quesadillas: Heat a griddle or large pan over medium-high. 12.Lay out the tortillas. Divide the meat, brie, and monterrey jack between the tortillas, placing the meat and cheese on half of the tortilla. 13.Top with a spoonful or two of barbecue sauce and fold the other half over. 14.Place on the heated grill (brushing the tortilla with oil or cooking spray will prevent sticking). 15.Cook until the bottom is crisp and flip over. 16.Remove from heat and slice into thirds. Serve with extra barbecue sauce.

Stuffed Shells Recipe zest of one lemon Sauce: 1/3 cup / 80 ml extra virgin olive oil, plus more for the pan 1 1/2 teaspoons crushed red pepper flakes scant 3/4 teaspoon fine grain sea salt 4 medium cloves of garlic, finely chopped 1 28-ounce can crushed red tomatoes 1 14-ounce can crushed red tomatoes Filling: 1 15-ounce container ricotta cheese 1 egg, beaten 1/4 teaspoon fine grain sea salt 1 cup / ~5 oz grated mozzarella 1 bunch of chives, minced 25-30 jumbo dried pasta shells Oil a 13 x 9-inch / 33 x 23-cm baking pan, or equivalent, and sprinkle the zest of 1/2 the lemon across it. Set aside. Get a big pot of water boiling, and preheat your oven to 350F / 180C with a rack in the middle. To make the sauce, combine the olive oil, red pepper flakes, sea salt, and garlic in a cold saucepan. Stir while you heat the saucepan over medium-high heat. Saute just 45 seconds or so until everything is fragrant - you don't want the garlic to brown. Now stir in the tomatoes and heat to a gentle simmer, just a minute or two. Remove from heat and carefully take a taste (you don't want to burn your tongue)...If the sauce needs more salt add it now. Let cool. To make the filling, combine the ricotta, egg, and salt in a medium bowl. Mix until combined, then stir in the mozzarella, remaining lemon zest, and 3/4 of the chives. Set aside. Cook the shells according to package instructions in well-salted water - until al dente. If you overcook, the shells will tear as you attempt to fill them. Drain and let cool long enough to handle with your hands - see photo. Spread 1/3 of sauce across the bottom of the prepared pan. Fill each shell with ricotta, and arrange in a single layer in the pan. Ladle the remaining sauce over the shells, cover with foil and bake for 30 minutes, uncover for the final 15 minutes or until the shells are cooked through. Sprinkle with the remaining chives and serve hot. Serves 4 - 6. Prep time: 30 min - Cook time: 45 min

Chicken Breasts with Cilantro and Red Thai Curry Peanut Sauce (4 servings, with lots of extra sauce for another use, from Fine Cooking Annual with slight adaptations by Kalyn) Ingredients: 4 boneless, skinless chicken breasts, pounded to 1/2 inch thick 2 T peeled and minced fresh ginger 1 T chopped fresh garlic 1/2 cup smooth natural peanut butter (without added sugar) at room temperature 1/4 cup rice vinegar (not "seasoned" vinegar which has sugar) 2 T soy sauce 2 T Splenda or sugar (use Splenda for South Beach Diet) 1 tsp. red Thai Curry Paste (I like Thai Kitchen brand) 3 T homemade chicken stock or canned chicken broth fresh ground black pepper to taste about 2 T peanut oil (depends on your pan) 1 cup unsweetened lite coconut milk (I use Thai Kitchen Lite Coconut Milk) 4 T finely chopped cilantro (or more), plus more for garnish if desired Instructions: Trim chicken breasts so they are about the same size and remove any visible fat or ragged edges. Put each chicken breast inside plastic bag or between plastic wrap and use a meat mallet to pound to even 1/2 inch thickness. Finely mince the ginger and garlic. In food processor or immersion blender canister combine ginger, garlic, peanut butter, rice vinegar, soy sauce, Splenda or sugar, curry paste, and chicken stock. Taste to see if you want to add more red curry paste. (I didn't.) Heat the oil in heavy, large frying pan. Season chicken with black pepper, then add chicken to pan and saute over medium heat about until chicken breasts are nicely browned and cooked through, about 4 minutes on first side, and 2-3 minutes more on second side. (It's important not to overcook the chicken; it should feel barely firm to the touch when you take it out of the pan.) Remove chicken to plate and cover with foil. Reduce heat to low and add 1 cup coconut milk. (You can freeze the other 3/4 cup coconut milk for another time.) Scrape off browned bits from the bottom of the pan, then stir in peanut/curry/ginger paste mixture and heat through, about 2-3 minutes. Add any juices that have accumulated on the pate and cook another minute or two. Turn off heat and mix in chopped cilantro. Serve the sauce immediately over chicken breasts, with additional chopped cilantro for garnish if desired.
