PITA TOSTADAS WITH BUTTERNUT SQUASH, BLACK BEANS, & AVOCADO 1 butternut squash EVOO 1 tsp cumin salt 1 tbsp maple syrup 4 pita 1 can black beans 2 limes 1/4 cup greek yogurt 2 avocados garnish: chopped cilantro and toasted pumpkin seeds Roast squash @ 400 F - 45 min. Cool then mash with cumin, chili powder, maple syrup, and salt. Bake pitas. Toss black beans with half of lime juice, EVOO + salt. Whisk together yogurt with other half of lime juice + salt. Assemble.
