Pork Tenderloin - so good! The pan sauce is what it is all about. We dipped our bread in it!!! (marinated in olive oil, soy sauce, red wine vinegar, lemon juice, Worcestershire sauce, parsley, dry mustard, pepper and garlic)

My Review: BBQ chicken tonight-potato side dish…SO GOOD! Next time I will mix all ingredients in a large bowl (as I did this time) only I plan to foil wrap into individual servings for a more even browning. Don't be stingy on the salt, as the worcestershire doesn't add much salt, and garlic would work wonderfully (minced). Enjoy!
White Chicken Enchiladas. Really good! I would maybe add some hot sauce and salsa for more spice. I also added in some corn with the chicken and cheese and it was a nice addition. Just make sure you don't curdle the sour cream sauce. Great for a dinner party night.
Parmesan crusted chicken breast. So simple. Just mayo, parmesan cheese, italian bread crumbs, and chicken, then bake. Super juicy. If you aren't a mayo fan, you can sub in yogurt/sour cream. Great simple chicken dish for a busy night.
Sweet and Spicy Bacon-wrapped chicken. I baked these instead of grilling them. Also used red pepper flakes because I had no chili powder. Great smoky sweet flavor! Not as spicy as I'd like so if you like spice make sure to get chili powder. Great quick meal to throw together on a week night.
APPLE CINNAMON SLOW COOKER PORKLOIN- super easy and was tasty too! I subbed maple syrup for honey (didn't have any) and added some apple cider in the bottom to keep from burning since my loin was underweight. I did closer to 4 hrs, would cook less next time but it wasn't too dry thanks to the cider. Served with polenta and was a lovely dinner with leftovers.
