A quick throw together dish for the 4th of July. Fried Wild Alaskan Sockeye Salmon with Cherry, Chipotle, Vidalia Marmalade with Dinosaur Kale and Crispy Bacon....paired with 2007 Marimar Estate Dona Margarita Vineyard Pinot Noir. The cherries came from the tree in the front yard and the kale from the garden. The rest of the ingredients (vidalia onion, olive oil, butter, red wine vinegar, dried thyme, dried crushed chipotle chili, and bacon) was from the pantry or the refrigerator. Yummy!
