Nanny of the Maroons Jamaica c.1680 -c. 1750 Nanny of the Maroons was a Jamaican spiritual leader who fought against British slave trading in the eighteenth century. An expert strategist, Nanny implemented the use of camoflage and guerilla warfare to protect her people. In 1740 she skillfully negotiated autonomy for her people. Although her existence is heavily steeped in myth and superstition, Nanny is still regarded as a historic persona, and is the national heroine of Jamaica today.

Fried dumplings. A staple for breakfast. Some compare it to biscuits. I think its a bit too dense to be biscuits. However, if they are really good, they can be eaten alone and cold! Some add a dash of sugar. Some add a dash of corn meal. (I like mine with cornmeal ;-))

Scotch bonnet peppers. Don't they look like the bonnets often seen in Scotland? Grown mostly in Jamaica. They are in the chili family. Quite popular flavorful and hot. Do not burst it in the pot. It can spoil your entire dish!

Ah...the patty. Some like it meat. Some like it flaky. If the patty's not good, the word spreads fast! Some like it with cocoa bread, some like it with cocoa bread and cheese...and of course in the paper bag. Whether its beef, chicken, lobster, shrimp, soy, spicy or mild...Make it flaky for me please! Nice with an iced cold ginger beer.... AH!!!
