Mixed baby greens salad, sliced radishes, grape tomatoes, orange bell pepper, pomegranate seeds, chopped herbs–dressed with balsamic vinegar.  Trader Joe’s flax seed tortilla, tofu sauteed in veggie broth with black beans and sweet corn (see Mexican Salad recipe for more info on filling mixture), Trader Joe’s Roasted Garlic Salsa (lower sodium), 1/4th Hass avocado, and a sprinkling of vegan cheese.
