Chili & Cheese Macaroni Mix cooked elbow mac with browned beef/onion and mix with red bell pepper, chopped. garlic cloves, minced, chili powder. cumin, crushed tomatoes, diced tomatoes, a little brown sugar, Colby Jack cheese, shredded and maybe other cheese and some spahgetti sauce. Make a lot, bake one and fridge or freeze one for later. 400 degrees covered till hot. YUM

Chili Cheese Macaroni= salt for water 1/2 pound elbow macaroni (about 2 cups uncooked pasta) 3 tablespoons vegetable oil 1 1/2 pounds ground beef (85% lean) 2 medium onions, chopped 1 red bell pepper, stemmed, seeded and chopped 6 garlic cloves, minced 1 1/2 tablespoons chili powder 1 tablespoon ground cumin 1 (28 oz) can crushed tomatoes 1 (14.5 oz) can diced tomatoes 1 tablespoon light brown sugar 12 oz Colby Jack cheese, shredded (about 2 1/2 cups) Oven to 400 degrees.

Chili & Cheese Macaroni recipe slightly adapted from Cook's Illustrated table salt 1/2 pound elbow macaroni (about 2 cups uncooked pasta) 3 tablespoons vegetable oil 1 1/2 pounds ground beef (85% lean) 2 medium onions, chopped 1 red bell pepper, stemmed, seeded and chopped 6 garlic cloves, minced 1 1/2 tablespoons chili powder 1 tablespoon ground cumin 1 (28 oz) can crushed tomatoes 1 (14.5 oz) can diced tomatoes 1 tablespoon light brown sugar 12 oz Colby Jack cheese, shredded (about 2 1/2 cups) Preheat the oven to 400 degrees. Bring 4 quarts water to a boil in a large pot over high heat. Stir in 1 tablespoon salt and add dry macaroni; cook until al dente. Reserve 3/4 cup pasta water and drain pasta. Transfer to a large bowl and set aside. Using the same large pot, wipe dry and heat over medium heat. Add 1 tablespoon oil and heat until shimmering. Add ground beef and break it up in pieces to brown. Once browned, remove from pot and discard drippings. Set beef aside. Add remaining oil to the same large pot and return to medium heat until shimmering. Add onions, garlic, red pepper, chili powder, and cumin; cook, stirring occasionally, until vegetables are softened and begin to brown. Add the crushed tomatoes, diced tomatoes, brown sugar, reserved 3/4 cup pasta water and beef to the pot. Bring to a simmer and cook for 20 minutes, stirring occasionally until flavors have blended. Stir in the cooked pasta, 1/2 cup of shredded cheese and season with salt and pepper to taste. Transfer mixture to a 9x13 baking dish and smooth over with a spatula. Bake in the preheated oven for 30-35 minutes or until the mixture is hot and bubbling. Remove from oven and sprinkle the top of the dish with the remaining shredded cheese. Return the dish once again in the oven and bake for 5-10 minutes until the cheese begins to melt and brown. Cool for 10 minutes before serving.

Rainbow cake in a jar: cake batter + food coloring + 350° for 40 min = DELICIOUS Fun!

Rainbow Cake in Jar 1 box white cake mix made according to package instructions Neon food coloring in pink, yellow, green, turquoise, and purple 3 one-pint canning jars 1 can vanilla frosting Rainbow sprinkles Preheat oven to 350 degrees. Thoroughly wash and dry the inside of each canning jar. Spray the inside of each jar thoroughly with nonstick cooking spray. Set aside. Scoop about 1/2 cups of cake batter into five small bowls. It doesn’t have to be perfect, don’t panic if you get a little more of less of one color than another. Tint each bowl of cake batter with the food coloring until very vibrant. Spoon about 3 tablespoons of the purple batter into the bottom of each jar. Spoon equal amounts of turquoise batter, then green, yellow, and pink. Place the jars in a shallow baking dish, add about 1/4″ in water in the baking dish. Place the baking dish in the oven and bake for 30-35 minutes. Remove jars and allow to cool completely before scooping a small portion from the top of your cake and adding a hefty dollop of vanilla buttercream to the top. Sprinkle & serve, or cover with a lid and store in the fridge or pop into the mail & surprise someone you love! POST EDIT: Several commenters have indicated that the cake is not cooking all the way through in the 30-35 minutes indicated in the recipe. This was enough time for our cake, but I’m cooking at high altitudes, and my oven tends to bake hot. So, I’d recommend baking the cake for 40 minutes, then return it to the oven if it still doesn’t spring back to the touch when you check to see if it’s finished. As for the cake puffing up and out of it’s bottle, ours did that a bit, as well. Easy fix. We just scooped a bit of the cake out to make room for the frosting and wiped the outside of our jars clean. Several people have indicated that the wide-mouthed mason jars work a little better for this purpose. I’ve not yet baked with wide-mouthed. What you see above is what was baked in my kitchen according to the recipe instructions, and what came out of the oven when it was all. Of course, if you’re feeling wildly impatient, you can also zap the cake in the microwave for 2 minutes. It’s going to bubble up, for sure, but you can scoop the top part of that cake out, frost it, and no one will ever be the wiser. Good luck, everyone! This is such a fun cake. My kids went nuts over it, and I hope it works as beautifully for you as it did for us!

Buffalo Chicken and Potato Casserole 3-4 Boneless Skinless Chicken Breasts 1 Package Buffalo Wing Seasoning 5 cups Thawed Hash Browns 1-1/2 cups Shredded Cheddar Cheese 3/4 cup Ranch Dressing 1 can Cream of Chicken Soup 1/2 cup Italian Bread Crumbs 1) Preheat the oven to 350º. Spray 9x13 baking dish with cooking spray. 2) Cut chicken into strips and cook over med/high heat until chicken turns white. 3) In a large bowl mix hash browns, ranch dressing, 1 cup of cheese, and soup and spoon into baking dish. 4) Put chicken strips into a sandwich bag and toss with buffalo seasoning until well coated. 5) Spread chicken over top of the hash brown mixture and then sprinkle top with bread crumbs and remaining cheese. 6) Cover with foil and bake for 30 mins. Uncover and bake for an additional 15 mins.

Two Peas and Their Pod Recipe for Buffalo Hot Wings by Two Peas on January 6, 2009 Recipe for Buffalo Hot Wings Our dear friend Jason bought us a deep fryer for Christmas. Josh was on Cloud 9! He still is! I appreciate the gift, but a deep fryer? Jason knows I would NEVER allow Josh to buy one on his own, hence the gift. I am a health educator and try to eat healthy most of the time…minus my addiction to sweets:) I do believe in moderation in all things, including fried foods, but to own a huge deep fryer? That is a little much for me. But again, I do appreciate the gift and I am glad Josh loves it! Thanks Jason:) All Josh has been talking about is frying EVERYTHING…including our breakfast cereal. Don’t worry I didn’t let it go that far:) But Josh did make Buffalo Hot Wings for the Utah game. He was beyond excited. He researched recipes, bought all of the ingredients, and did all of the work. Well, his friend John helped, but I stayed out of it! He decided to use cut up chicken breasts for the “wings.” He didn’t want any bones to get in the way. He wanted the wings to be nice and meaty! After rolling them in a flour mixture, he carefully dropped them into the sizzling oil! Luckily, he did this outside so the house didn’t stink! After they were golden and crispy, he added the hot sauce he created. I didn’t taste it but I could smell the fire!! He rolled the wings in the sauce and baked them so they were nice and crisp! Josh was in heaven! He made sure everyone at the party sampled his wings. He said they were the best wings ever. He is still talking about them:) I am glad he enjoyed them! He did a great job! Boneless Buffalo Hot Wings 3 pounds of boneless skinless chicken breast cut into small cubes 4 cups of flour 2 teaspoons of salt 1 teaspoon of freshly ground pepper 1 1/2 cups of buttermilk Combine flour, salt, and pepper. Dip cut up chicken into flour mixture then dip into buttermilk then back into the mixture. Fry for about 5-6 minutes at 360 degrees or until golden brown on all sides. I used vegetable oil since I am allergic to Peanut Oil. Sauce 1 large bottle of Franks Red Hot

French Fries Done Right 2 russet potatoes, peeled 2 quarts pure olive oil, vegetable oil, or rendered beef kidney fat salt Cut the potatoes lengthwise into sticks ½ inch wide and thick. Soak the sticks in cold water to cover for 20 minutes. Drain them in a colander and then spin them, in batches, in a salad spinner, or use kitchen towels to rid them of most of the liquid. Pat them dry with kitchen towels–not paper towels, which will stick and tear. At this point you can fry the potatoes ahead of time, and then fry them in hot oil just before serving. Pour the oil into a deep, heavy pot large enough so that it comes no more than halfway up its sides, and heat to 320˚F, or until a potato stick dropped into the oil sinks to the bottom of the pot and then rises to the surface. Add a handful of the potatoes and fry for about 10 minutes, or until cooked through but not browned. If the potatoes start to brown, reduce the heat slightly. Using a spider or skimmer, remove the potatoes from the oil and put them on a sheet pan, Continue to fry the remaining potatoes, adding as many at once as you can without the oil boiling over. Increase the temperature of the oil to 360˚F. Add a handful of the potatoes–they should stay on the surface rather than sink–and fry for 1 to 2 minutes, or until golden brown. Using a spider or skimmer, transfer the potatoes to paper towels to drain briefly. Continue to fry the remaining potatoes, adding as many at once as you can without the oil boiling over. Sprinkle with salt and serve immediately. VARIATION: For thin shoestring french fries, use a mandoline or a knife to cut the potatoes into julienne sticks ⅛ inch wide and the length of potato, and follow the recipe above. Instead of 10 minutes for the first frying, 5 minutes will probably suffice to cook the potatoes through, but do not let the potatoes brown. Serves 2 to 3
