    Ultra-Crispy Roast Potatoes - microwave quartered potatoes for 10 minutes. Drain water. Drizzle a fair amount of olive oil over the potatoes, gently toss the potatoes, and sprinkle with oregano. Put in a hot oven 450 degrees for about 20-25 minutes until crispy. Watch closely

    for the best irish steak ever...Layer kosher salt on bottom of pan; place potato on salt and add rosemary sprigs. Cut garlic in half and add to pan. Cover with aluminum foil and cook 1 ½ hour at 450°. Remove foil, garlic and rosemary and cook another ½ hour at 500°. Garlic is soft – squeeze for juice and mix with butter to top the potato. This is delicious.
