Peanut Butter Bars - SOOO easy and delicious. Tastes like a Reese's PB cup. Hardly any ingredients needed and takes little time to make. I use a food processor to grind my graham crackers but you can easily buy the box of crumbs that are available in baking aisle :)

Banana Chocolate Chip Bread - really easy and simple recipe for banana bread. The cinnamon adds a nice spice to it. i made half without choc chips (my mom's request) and the other half with dark choc chips (my bf was OBSESSED with them). I used a muffin tin rather than loaves and it yielded 16 muffins. I used a larger cookie scoop to get even amounts of dough. Really enjoyed these :)

1/7/12 - Garlic Knots - Recipe from Pillsbury. These were definitely easy to make. Could have used a little more garlic and seasoning but I also dumped a good portion of it because I didn't think I needed it. USE ALL OF THE BUTTER/HERB MIXTURE!!! They were pretty good otherwise. I also didn't salt and pepper them. Figured they didn't need it but we sprinkled on some garlic salt afterwards when we realized we should have used all the garlic mixture. Will definitely try again! Zippy Shepherd's Pie - First attempt at shepherd's pie & it was a big hit! After reading reviews, I decided to add the ketchup, soy sauce, worcestershire sauce, & curry bit by bit to get the desired taste (i actually used prob 1/2 tbs soy sauce, 1/2 tsp curry powder). I used 1/2 onion, little more than 1/2 sm can of garlic/olive oil diced tomatoes + 1/2 can broth. Eyeballed frozen corn + used fresh green beans (Beans were lil undercooked IMO). Make double potatoes to cover top! Great flavor!

Bacon Wrapped Smokies -- made these for the first time for this last NYE. they were the star of the party!!! Don't skimp on the brown sugar - it really makes these special. I actually think I'll try rolling them in brown sugar before putting in pan to bake next time. Super easy and delicious :)

Fluffy Pancakes Recipe - a nice pancake recipe that's slightly on the thicker side but still fluffy. I used apple cider vinegar (all I had on hand). These would be good pancakes to put fruit or choc chips in. My batch yielded 6 using a 1/4 cup for each pancake. Good for freezing for later when you need a quick breakfast!

Mozzarella Stuffed Meatball Sliders - these came out sooo flavorful! For the "paste" (which came out more finely minced in my processor), I used onion, garlic, and parsley (I omitted chili bc I didn't have it). My recipe yielded 12 smaller meatballs which was perfect for appetizer/tapa sized sliders. I used jarred marinara that I spruced up with extra thyme, oregano, and basil. Very yummy! 1/16/12 - Saltine Cracker Toffee - I can say this is actually a very easy recipe in terms of steps required. Lay out the crackers, boil the sugar and butter, pour mixture over crackers, pop in the oven, spread melted chocolate on top, let cool. Voila! I opted to try to sprinkle the chocolate chips on top instead of melting in micro and spreading. I had to pop the pan back in the oven for a minute or two so I could spread the chocolate. Semi-Homemade Peanut Butter Swirl Brownies - everyone loved these on my first attempt (absolute yum with vanilla ice cream!). I think they need to bake longer than usual bc of all the oil in the pb. Possibly cut back oil a little in batter and omit sugar in PB mixture (PB has enough of that as it is!!!)
