Sundried Tomato & Spinach Quinoa 1 1/2 C uncooked quinoa 5 oz pkg baby spinach 1 tbsp olive oil for sauteing spinach 2 tbsp olive oil for seasoning 1 clove minced garlic 3 T cider vinegar 1/2 C sundried tomatoes 1/2 tsp greek seasoning 1/2 C feta cheese Cook quinoa according to pkg & cool. Saute spinach in 1 tbsp of olive oil until wilted. Remove from heat and drain. Combine cooled quinoa with 2 tbsp olive oil, sundried tomatoes, spinach, garlic, cider vinegar, greek seasoning & feta cheese.

No Peek Beef Tips 2 lb Stew Meat, cubed, 1 oz can cream of mushroom soup, 1 packet brown gravy mix, 1 packet onion soup mix, 1 4oz can mushrooms, 1 cup water Cover & bake at 300 for 3 hrs or in Crock Pot on low for 6-8 hrs. Serve over noodles, rice or mashed potatoes.
NO PEEK BEEF TIPS: 2 lb Beef tenderloin tips, Stew Meat, Chuck Roast or Chuck Eye, cubed; 10.5 oz can cream of mushroom soup; 1 pkt brown gravy mix; 1 pkt lipton dry onion soup mix; 4 oz can mushrooms; 1 cup water or ginger ale soda ~ Add cubed meat to 9x13" pan. In large bowl mix remaining ingredients together & pour over meat. Add mushrooms & stir to coat. Cover with foil; bake at 300*F for 3 hrs. Do NOT remove foil until done! Serve over rice, mashed potatoes, egg noodles. Serves 6 - 8.

(And equally delicious!)Ingredients 1 cup quinoa (or 2½ to 3 cups leftover cooked quinoa) 1 ½ cups water or low-sodium stock ¼ small onion, chopped 2 carrots, peeled and chopped 3 scallions, chopped and divided 3 garlic cloves, minced ½ teaspoon fresh ginger, minced 1 tablespoon olive oil Optional 2 eggs, lightly scrambled (still raw) ½ cup frozen peas, thawed Sauce: 1 ½ tablespoons teriyaki sauce 2 ½ tablespoons soy sauce ¾ teaspoon sesame oil Instructions Rinse quinoa a few times in cold water. Bring quinoa and water or stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt. Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and let set for five minutes or so. Fluff with a fork. Cool and store in the fridge, preferably overnight. Mix teriyaki, soy sauce, and sesame oil in a small bowl. Set aside. Heat ½ tablespoon olive oil in a large sauté pan over a high heat. Add onion and carrot, cook about two minutes. Add 2 scallions, garlic and ginger to the pan. Cook another two minutes. Add in the rest of the olive oil and the quinoa. Stir-fry about two minutes. Add sauce and stir-fry until incorporated, about two minutes. Make a well in the center of the quinoa pour eggs in, scramble. Melted Butter Cinnamon & sugar Preheat Oven to 350˚ Roll out the dough on a greased cookie sheet, brush with butter, sprinkle Brown Sugar and Cinnamon Roll up an apple slice in the dough forming a crescent, brush with melted butter and top with cinnamon. Repeat for others. 3. Bake for 12-15 Mins at 350˚. 4. Remove from Oven, filling will be hot! Serve alone or with a dollop of Vanilla Ice Cream.
