I love it with just some butter on top but you could also use it for sandwiches etc.  1 T coconut flour 2 T ground flaxseed  1 egg 2 tsp cold Kerrygold butter  1/2 tsp baking powder 2 grinds pink salt  Mix and put in ramekin or small bowl.
