THE WORLD'S BEST CHICKEN (MAPLE DIJON CHICKEN): 4 boneless skinless chicken breasts, ½ cup dijon mustard, ¼ cup maple syrup, 1 Tbsp red wine vinegar, salt. Directions: Preheat oven to 425°. In a small bowl, mix together mustard, syrup, and vinegar. Place chicken breasts into 9×13 greased baking dish. Season with salt. Pour mustard mixture over chicken. Make sure each breast is coated. Bake for 30-40 minutes.
Yum! 1/2 cup mustard, 1/4 maple syrup (or raw honey), 1 tblsp balsamic (or other) vinegar. Season chicken with salt & pepper, cover in sauce, bake at 425 for 30-40 minutes. Easy chicken breast recipe. Seems like its totally freezable too. I love freezer meals.

Crash Hot Potatoes. Boil baby potatoes (I used red) until fork tender. Preheat oven to 450 degrees. Drizzle olive oil on a baking sheet, set potatoes on sheet & using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie). Crushed Hot Potatoes. Smash boiled potatoes, season with olive oil, salt, pepper, and herbs, toast on top rack at 450 for 20-25 mins.

Bring a pot of salted water to a boil. Add in 'new' potatoes and cook them until they are fork-tender. On sheet pan, drizzle olive oil. Place potatoes on the cookie sheet, 'gently' mash. Brush the tops of each crushed potato generously with more olive oil. Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.) Bake @ 450 for 20-25 minutes until golden brown.

Apricot Power Bars. I made these and they are SO TASTY! Reminded me of a buttertart square somehow. They are good but I cut mine into six bars and figured the nutritional info to be (per bar): 435 calories, 3.6 g of saturated fat, 23 g carbs, 6 g fiber, 10 g sugar, 7.5 g protein.
