Iron Skillet Salmon Preheat oven to 400’ or 425'. Heat dry cast iron skillet on high. Dry fish well. Coat with olive oil. Season liberally with kosher salt and pepper. Lower the heat to medium and place salmon on dry skillet skin side up. Sear about 3-4 minutes? Until it can move around without sticking and has a good crust…Flip the fish and place skillet and all in the oven for about 5 more minutes…until it mostly springs back. Cover with foil and let it rest 10 minutes.

This tasty rub gives this quick salmon dish fantastic flavor. Paired with a green veggie and rice, it’s a delightful weeknight dinner that’s special enough for company. I like to serve it with sauteed spinach, garlic, salt, and Parmesan cheese.
