Adding Mochi and Tapioca Pearls Makes Halo Halo Extra Fun! I am looking at this photo in awe of the sweetness, texture, and beauty of this dessert. Halo Halo has to be one of the most dreamiest desserts to ever exist. Halo Halo is a traditional summer cooler from the Philippines. Made with sweet beans and mongo beans, a blend of fruit, evaporated milk, shaved ice and a scoop of delicious ube ice cream. The sweet treat gets its unique color from the ube (“ooo-bee” or “ooo-bay”), an incredibly vibrant, sweet, purple yam used in a variety of Filipino desserts (like ube cake, ube buns, and ube macaroons ). I first had Halo Halo at Purple Yam with Starr a couple of years ago. Purple Yam , is located on Courtelyou Road in Brooklyn. They carry many specialties from the Philippines. So delicious. This is one variation of Halo Halo. In Ronkonkoma, there is a great Asian Market that carries many elements that make up Halo Halo. Located on Portion Road, it is a local, friendly place that you can find many specialty items that I have mentioned. This is a wonderful treat for kids and adults alike. So try something new and enjoy! Halo-Halo Recipe (Tropical Fruit Melange) 2 tablespoons kaong or... 2 tablespoons nangka (jackfruit) 2 tablespoons macapuno (a variety of coconut meat sold in bottles) 2 tablespoons sweetened kidney beans 2 tablespoons sweetened garabanzos 2 tablespoons sweetened plantains 2 tablespoons ube or yam 2 tablespoons custard or creme caramel 2 tablespoons sweetened corn kernels crushed ice to fill glass 2/3 evaporated milk a scoop of ice cream on top
Filipino recipes are commonly sweet, spicy, sour, salty or a combination of any of the flavor. The Filipino food recipes are usually served with rice and sometimes they fry it and mix it different seasonings. Pinoys are very resourceful and they have made different styles in cooking each dish. However, even though the dishes have evolved the natives are still preserving the traditional method of cooking food in a special pot.

With a face that tells a thousand tales, this unknown young woman was photographed in the Philippines by Dutch photographer Francisco Van Camp in 1875. The photograph’s inscription describes her as Mestiza Sangley-Filipina. Fresh-faced and all-natural with her hair flowing wildly, this black and white portrait is worlds away from the Victorian photography we normally see. What a beauty.

The photograph’s inscription describes her as Mestiza Sangley-Filipina, a term widely used in the 16th to 19th-century Spanish Philippines to differentiate ethnic Chinese from other types of island mestizos (such as those of mixed Indio and Spanish ancestry, who were much fewer in number.) Children Book Review :: Cora Cooks Pancit Do you remember that meal you make because Mom made it? This book brings back that memory and as I shared this story with my son I began to think about the wonderful memories shared in my family's kitchen growing up. http://cubbycorner.blogspot.com/
Filipino dishes wonderful. Cora Cooks Pancit is available on Amazon, so multicultural and includes recipe.
Cora Cooks Pancit, by Dorina K. Lazo Gilmore, Kristi Valiant (Illustrator) | Cora is a young girl who wants to help cook. She gets her wish as she helps her mom cook the Filipino dish pancit. Wonderful illustrations. (age PreK)
Cora Cooks Pancit (Picture Book): Cora loves being in the kitchen, but she always gets stuck doing the kid jobs like licking the spoon. One day, however, when her older sisters and brother head out, Cora finally gets the chance to be Mama's assistant chef. And of all the delicious Filipino dishes that dance through Cora's head, she and Mama decide to make pancit, her favorite noodle dish.
Kristi Valiant: Cora Cooks Pancit. I am absolutely buying this children's book for my kids! Great way to integrate culture in the classroom too!
Cora Cooks Pancit by Dorina K. Lazo Gilmore. A mouthwatering story of a young girl cooking up her family's favorite dish. Yum!
Cora Cooks Pancit by Dorina Lazo Gilmore, Kristi Valiant. A colorful picture book about a young Filipino girl who learns to cook her favorite traditional meal with her mother. The book also contains the actual recipe and cooking instructions. After reading this text I might have my students share their favorite meals. Through this my students could begin to learn about different cultures and lifestyles. Food always generates a lot of discussion.

From Lee & Low Books Lee & Low Books, an independent children’s book publisher focused on diversity, has acquired children’s book publisher Shen’s Books. The acquisition is a new milestone in the growth of Lee & Low, which published its first book twenty years ago and has maintained its commitment to diversity in children’s books for two decades. Originally based in California, Shen’s Books was founded as a retailer in 1985 and began publishing books in 1997. Its books emphasize cultural diversity and tolerance, with a focus on introducing children to the cultures of Asia. Titles include the popular Cora Cooks Pancit, about a young girl cooking up a favorite Filipino dish with her mother, and the Cinderella series, which features retellings of the Cinderella story from cultures around the world. “I am thrilled that our titles will be joining the amazing catalog of books at Lee & Low,” said Renee Ting, president and publisher of Shen’s Books. “There is no better publisher I can think of to carry on the values and spirit of Shen’s Books and advance the cause of diversity in children’s publishing.” Shen’s Books will now become an imprint of Lee & Low, which will publish both backlist Shen’s titles and new books. The Shen’s Books imprint of Lee & Low will release seven reprints in early 2014, as well as one new title in the spring: Summoning the Phoenix, a collection of poems about Chinese musical instruments by Emily Jiang and illustrated by April Chu. “We have admired the work that was done by Shen’s in the past, and we are honored to continue their legacy,” said Jason Low, Publisher of Lee & Low Books. “Lee & Low’s emphasis on diversity, cultural authenticity, and high-quality artwork makes it a perfect home for Shen’s Books.” The acquisition comes a year after Lee & Low’s acquisition of Children’s Book Press, another California-based multicultural children’s book publisher. Since then, Lee & Low has brought over 85% of Children’s Book Press’s backlist titles back into print, with several more planned for the upcoming year. Lee & Low is the largest children’s book publisher in the country specializing in diversity. The company provides a comprehensive range of diverse books for young readers, from Bebop Books for children just learning to read to picture books from its Lee & Low and CBP imprints, to gripping speculative fiction for young adults from Tu Books.
