Noche Underground Dinner Club - Cochinita pibil is a traditional Mayan dish of slow roasted pork. The pork is wrapped in banana leaves and cooked in a 'pibil' or stone oven, buried in the ground. At Noche, we cooked the cochinita in a clay pot in an electric oven at slow temperatures for five hours, then served the deliciousness over blue corn hand made gorditas, pickled onions, queso fresco and salsa. It's amazing!
