Since I posted the recipe for my Mama's Southern Potato Salad I haven't been able to stop thinking about the other potato salad. The one I loved so when we traveled in Germany. Warm, bacon-y, light, and oddly enough it had no mayonnaise, eggs, or mustard. I decided as soon as I published the
BIKINI FIT LUNCH: Black-eyed Pea Salad 2 cans black-eyed peas, 1 diced tomato, 1/2 diced red onion, 1 small or 1/2 large red, yellow, or orange bell pepper, 1 jalapeno,4 green onions, 1/3 cup cilantro, 1/4 cup rice wine vinegar (unseasoned), 2 Tbsp. canola oil, 1/2 tsp. honey, salt and freshly ground black pepper.
2 cucumbers cut up, 1 pint cherry or grape tomatoes (about 30), 2 tablespoons chopped fresh basil, 1 cup fresh mozzarella (I like to use the little balls), 1 avocado, 1 tablespoon extra virgin olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon garlic powder, Salt and pepper to taste.
