Note: I made this for a work potluck and it was a big hit. The dressing would be great for salads too! This Mexican Quinoa salad is full of fresh ingredients and has a zippy jalapeno vinaigrette! Perfect for a side or main dish.
I put of a banana in and 1 tablespoon of maple syrup in an attempt to sweeten them up-- they were sweeter, but the pumpkin still made them slightly bitter. However, all of the spices tasted very reminiscent of fall.
