Sweet and spicy slow cooked pork sweetened with brown sugar, cola, chipotle chilies, green chilies, cumin and spices. Delicious over cilantro lime rice and black beans. This was a recipe request to make over Cafe Rio's sweet pork recipe, only problem is I've never eaten at Cafe Rio. After reading dozens of copycat recipes, I came up with my own lightened up version, which was a huge hit in my home. We had enough for several meals, and made a burrito bowl out of the leftovers with cilantro lime rice, black beans (recipe coming soon), pico de gallo, lettuce, avocado and a little low fat cheese. But this was also great served over rice. Sweet Pork Burrito Bowl The crock pot is parked on my counter lately, it's so helpful on the days I have to go in to work. What can beat coming home from work and smelling dinner just about ready! Since the marinade gets tossed after it cooks, I wasn't sure how to calculate, so I counted half the sugar and cola from the marinade just to be sure. Adjust the heat to your liking, this is medium heat, if you like it hot, add more chilies, if you prefer it mild, use less. Enjoy! Slow Cooked Sweet Barbacoa Pork Gina's Weight Watcher Recipes Servings: about 10 • Serving Size: 3 oz • Old Points: 4.5 pts • Points+: 5 pts Calories: 202.5 • Fat: 6.3 g • Protein: 26.2 g • Carb: 11.5 g • Fiber: 0.6 g Adapted from Favorite Family Recipes Ingredients: For the Marinade: 2.5 lbs pork loin roast, all fat trimmed salt and pepper garlic powder 6 oz Coke zero 1/4 cup brown sugar (unpacked) 1/4 cup water Step 2 8 oz Coke zero 6 oz can sliced green chilies 8 oz tomato sauce 1 chipotle chile in adobo sauce 1/8 tsp garlic powder 1/8 tsp cumin 1/8 tsp chipotle chili powder (to taste) salt and pepper to taste 1/3 cup brown sugar (unpacked) Directions: Season pork with salt, pepper and garlic powder and place in the crock pot. Add 6 oz of coke and 1/4 cup of brown sugar. Marinate refrigerated for a few hours or overnight turning meat at least once while marinating. Remove crock from refrigerator, add water, and cook on high for about 3-4 hours (or until it shreds easily). Remove pork from crock pot and discard any liquid left in the pot. Shred pork with two forks. Step two: In the crock pot, combine 8 oz coke, green chilies, tomato sauce, chipotle chile, garlic powder, cumin, chipotle chili powder and remaining brown sugar. Put shredded pork back in the crock pot and combine with sauce. Adjust salt and pepper to taste, cover and cook on high 1-1/2 hours more.

Roasted Garlic Herb Shrimp 1/3 cup olive oil 1 lemon, zested then half cut into thin slices and other half into wedges 3-4 fresh thyme sprigs, leaves removed sea or kosher salt and fresh black pepper spaghetti/pasta, couscous or rice for serving 1 pound fresh shrimp, medium-sized, deveined with tails off 5 cloves garlic, minced 1. Preheat oven to 400 degrees F. In a 9×13 baking pan combine olive oil, lemon zest and thyme. Season with salt and pepper. Bake in oven for 12 minutes. Meanwhile cook pasta, couscous or rice. 2. Remove pan from oven, add shrimp, garlic and the thin sliced lemons (don’t squeeze them), toss to coat with oil mixture. Bake for 8-10 more minutes or until shrimp turn pink and start to curl. Serve over pasta, couscous or rice tossed with extra-virgin olive oil and fresh-squeezed lemon with additional lemon wedges for serving.

I served this over Lemon Linguine w/ Garlicky Breadcrumbs (see 11/11/14 pin for pasta recipe). It was spectacular! I added stir-fried greens and shredded carrots on the side. Shrimp and Zucchini with Bowties in Light Tomato Sauce... Here's a very light primavera-style pasta dish that you can whip up in a snap on a weeknight for the family. So light, in fact, you may decide to spice it up a little more. I tossed the shrimp in some Old Bay before cooking for a little added flavor. And instead of plain salt, I opted to use a little Adobo seasoning (instead of salt) on the tomato mixture too. Topping this with some nice parmesan cheese makes all the difference too.

Barbacoa Beef recipe from Skinnytaste. She used a pressure cooker but slow cooker instructions are as follows: Sear meat on high heat in a pan with 1 tsp oil or oil spray. Place all ingredients in your crock pot and cover. Cook low for 8 hours. After 8 hours, shred pork using two forks and combine well with the juices at the bottom. Remove bay leaves and adjust salt and cumin (you will probably need to add more). Let it cook another 15-30 minutes.
