Blackened Chicken, from our recipe manual. **Makes 2 servings** 1/2 tsp paprika, 1/8 tsp salt, 1/4 tsp cayenne pepper, 1/4 tsp ground cumin, 1/4 tsp dried thyme, 1/8 tsp white pepper, 1/8 tsp onion powder, 7 oz boneless chicken breast halves. Preheat oven to 350. Heat cast iron skillet over high heat until hot. Mix together all spices and coat breasts evenly. Cook chicken 1 minute on each side, & place on baking sheet. Bake in oven until no longer pink and juices run clear, about 5 minutes.
