Pumpkin Cheesecake Cookies- Note: these didn't look anything like the pictures but tasted pretty good. Don't bother making crumbs to roll them in, the dough is too sticky to touch. I feel like they need baking powder or something to help them rise
Momofuku's Recipe: Nasu Dengaku/Miso Glazed Eggplant Recipe. I love the version of this dish that Ginza in Boston's Chinatown makes as well although I believe theirs is not vegan like this one is. I haven't made this dish so I can't be sure how it compares to Ginza's version.
