Dark Chocolate Guinness Cake with Baileys Cream Cheese Icing Print Prep time 20 mins Cook time 1 hour Total time 1 hour 20 mins Author: Swah Serves: 12 Ingredients Dark Chocolate Guinness Cake 1 cup Guinness beer 250g butter ⅔ cup cocoa powder 1¾ cups caster sugar 140 ml sour cream 2 eggs 1 tbsp vanilla extract 2 cups plain flour 2½ tsp bicarbonate of soda Baileys Cream Cheese Icing 4-5 cups sifted icing sugar 100g butter at room temperature 250g cream cheese at room temperature 4-6 tbsps Baileys Irish Cream (to taste) Instructions Dark Chocolate Guinness Cake Preheat oven 180°C and butter and line a 23cm springform tin. Melt the butter into the Guinness in a saucepan over low heat. Whisk in the cocoa and sugar and take the saucepan off the heat. Beat the sour cream with the eggs in a separate bowl until combined, than add to the beer mixture. Whisk in the flour and bicarb until combined. Pour the cake batter into the tin and bake for an hour. The middle of the cake may still be slightly wet when you take the cake out, but it will firm up as it cools down. Leave to cool completely in the tin as it is quite a damp cake and could collapse. Baileys Cream Cheese Icing Cream the butter and icing sugar together until well mixed. Add the cream cheese in cubes slowly until incorporated. Add in Baileys. Continue mixing for 5 minutes until the icing is light and fluffy. Dollop lashings of the icing onto the top of the cake to recreate the froth on a glass of Guinness. If you are feeling particularly dexterous, slice the cake length-wise and fill the cake with the icing too (there will be definitely be enough icing).

Thanks to Bakerella, everyone is fascinated with cake balls and cake pops. She is one smart cookie! If you have never heard of her, seriously check out her site and be prepared to be amazed! Though I enjoy making cake pops , I like working on cakes more. But, I recently discovered fusing cakes and cake balls can result in the coolest thing ever…. A CAKEBALL CAKE! Basically, it involves arranging cake balls in such a way that they resemble a cake. The idea for this cake came to me quite randomly when I was making cake pops and sticking them into a styrofoam to dry. I ran out of space on top of the styrofoam and stuck a few on the sides… It started to look interesting and that’s when I knew I had another fun idea to share with y’all I used styrofoam as the base but I think using a firm, pound cake might work just as well. Also, notice all the yellow paper flowers on the cake??? I used those to hide the white styrofoam base that was showing through. Trust me, if it wasn’t for these flowers, the cake was looking ghastly! lol Once I finished making this cake, I had some left over cake balls. Being one of those people who doesn’t like wasting food and especially anything covered in chocolate (hehe), I served those alongside my cake too. They look so pretty.. right? NOW, allow me to share with you my latest obsession… Dull, dark pictures with a single pop of color like the yellow paper flowers and yellow chocolate streaks in these pictures… I remember even as a teenager, I used to be drawn to such pictures at museums and art galleries. There is something very simple and beautiful about them. I also asked my husband to play around with this picture in Aperture. It has some very cool features that I don’t have in Photoshop (or maybe I do and I don’t know how to use them yet…lol). This picture reminds me of those old film pictures that we rarely get to see these days… isn’t it so cool?! I miss the good old simple days… This one is really cool too… Clearly, hubby and I went crazy when it came time to snap and play around with pictures. Hope you enjoyed the picture overload Now, just follow these steps to make your own cakeball cake: Step 1: Prepare your cake balls. I have done a tutorial on making cake balls HERE. Drizzle some yellow colored chocolate on top of each cake ball (just to make them look pretty) NOTE: I wanted to try and see what happens if we use regular chocolate instead of baking chocolate to cover cake balls. Save yourself the time and energy and don’t do it! lol. Baking chocolate firms up and dries up so much better and faster than regular chocolate. Step 2: Stick a toothpick into each cake ball. Step 3: Push this cake ball into a rectangular shaped styrofoam. Continue doing this until the top and sides are covered in cake balls. Step 4: Now, to hide the white styrofoam showing through, cut out square shapes of crafty tissue paper. Since the chocolate streaks on my cake balls were yellow, I used yellow tissue paper. You can use whichever color you like. Step 5: Hold the square sheet in your hand and start to pinch from the bottom… …until the top starts to crumple and starts looking like a messy flower… Step 6: To maintain this “flowery” shape, twist the bottom and it will start to look like a mini stem. Step 7: To give these flowers a more rounded petal look, cut off sharp, random edges from the top using scissors… …and you will end up with easy-to-make, cute flowers. Step 8: All you have to do now is place these flowers in any gaps you see between cake balls. NOTE: If you want, you can glue gun a toothpick into each flower and then push it into gaps. This way, the flowers would be more secure but I was feeling slightly lazy and didn’t feel like doing this…heheh Step 9: Place your cake on a cake board and you are done! I think a pink colored cake ball cake would also look very nice or how about a rainbow colored one? That would be gorgeous! By the way, thanks for all your insight into my pie vs.tart confusion. Coconut cake with cream of coconut. This is a refrigerator cake, so make sure you have room! I did a sheet cake vs round. And, it is definitely better the 2nd day vs last night. I believe there is an error in the recipe, as it calls for 3 full eggs vs 3 egg whites (if you put in the 3 full eggs your cake will turn yellow vs white). I did the 3 egg whites and it turned out fine. Then, I made the icing and hated it! I threw it out and used a cream cheese icing using a basic recipe, but substituted the left over unsweeted coconut milk (coconut milk will whip up just like heavy cream) for the heavy whipping cream. Recipe is as follows: 1 (8 ounce) package cream cheese, softened 1/2 cup unsalted butter, softened 4 cups confectioners' sugar 2, 3 or 4 tablespoons unsweetened coconut milk (use this to thicken or thin the confectionery sugar) 1 teaspoon vanilla extract 1 cup sweetened shredded coconut inside of the icing 1 cup sweetened shredded coconut scattered around the top (this would be a great Easter cake in that you could color the topped coconut)

I bought it and when we came home I put my husband to work getting it cracked open. “Why did you buy this thing anyways, he’s not gonna like it,” my husband said. And I explained to him the thing that makes us moms just a little smarter than the average person. The thing that my mom obviously knew all those years ago. That I could tell my son he wouldn’t like it, but he would never believe me. It is much easier to spend the couple of dollars and let him see for himself. And then he will never bother me about a coconut again. My husband then admitted that he too once talked his mom into buying a coconut so he could drink from it. He too was disgusted. And he too, was done with fresh coconuts. After about sixteen hours (ok, maybe twenty minutes, but it seemed longer), my husband got the coconut open. My son grabbed it and took a sip….and the look of disgust on his face was priceless. That is when I learned that not only was it worth the money to get him over his little coconut dream, but also to see the look on his face when he tasted the milk. Maybe my mom knew that too. I have made this coconut cake a couple of times, and so far it is my favorite. The recipe is from The Cake Mix Doctor Returns, and it is best made a couple of days in advance. The frosting, made with sugar, sour cream, and whipped topping, can then absorb into the cake layers, making it even more moist and delicious. Print Easy Coconut Refrigerator Cake IngredientsVegetable oil, for misting the pan Flour, for dusting the pan 1 package (18.25 oz) plain white cake mix (my favorite is Duncan Hines) 1 cup milk 1/2 cup cream of coconut, plus more cream of coconut for brushing the baked layers 3 large eggs Frosting: 2 cups sour cream 1 3/4 cups sugar 1 container (8 oz) frozen whipped topping, thawed (Cool Whip) 3 1/2 to 4 cups sweetened flaked coconut InstructionsPlace a rack in the center of the oven and preheat oven to 350. Lightly mist three 9 inch round cake pans with vegetable oil spray, then dust them with flour. Shake out the excess flour and set the pans aside. Place the cake mix, milk, 1/2 cup cream of coconut, and eggs in a large mixing bowl and beat with an electric mixer on low speed until the ingredients are incorporated, 30 seconds. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat for 1 1/2 minutes longer, scraping down the sides of the bowl again if needed. The batter should look well blended. Divide the cake batter evenly among the 3 prepared pans, about 1 1/2 cups batter per pan, smoothing the tops with a rubber spatula. Place the pans in the oven. If your oven is not large enough to hold 3 pans on the center rack, place to pans on that rack and one in the center of the rack above. Bake the cake until layers are light brown and the tops spring back with lightly pressed with a finger, 18 to 23 minutes. The cake layer on the higher rack may bake faster, so test it for doneness first. While the cakes bake, make the frosting. Place the sour cream and granulated sugar in a large mixing bowl and beat with an electric mixer on low speed for 1 1/2 minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat until the sugar has dissolved, 2 minutes longer. Add the whipped topping and beat on low speed until well blended. Stir in 3 cups of coconut and beat on low speed until mixed. Place the frosting in the refrigerator to chill for at least 10 minutes. Transfer the cake pans to wire racks and let the cake layers cool for 5 minutes. Run a sharp knife around the edge of each cake layer and give the pans a good shake to loosen the cakes. Invert each layer onto a wire rack, and then invert again so they are right side up. While the cakes cool, use a small brush to gently brush the tops of the cake with the remaining cream of coconut. Let the cakes cool completely, 15 minutes longer. When the cakes are cool, use a large serrated knife to cut each cake in half horizontally to make 6 layers. To assemble the cake, transfer one layer, cut side up, to a serving platter. Spread the top with a heaping 2/3 cup frosting. Place another layer, cut side up, on top of the first layer and frost with 2/3 cup frosting. Repeat this process with the remaining layers and frost the top and sides of cake. Sprinkle 1/2 to 1 cup coconut on top of the cake for garnish. NotesThis cake can be stored in the refrigerator for up to one week.2.6 Make this cake today and it will be moist and yummy just in time for Easter dinner. Enjoy!! Happy Friday!!
