Toasted Ravioli with Marinara Sauce If you’re lazy, but still like the allure of home-cooked Italian food–plus the illusion of a dish that could rival one found at a 4 star restaurant, then today’s recipe is for you. If you follow my recipes, you obviously know I’m a straight up Guido. While I don’t sport a “shirt before the shirt”, I love my heritage and the incredible food that comes from it. Try this half-homemade recipe for an appetizer at a party, or pair it with some bread and wine for a great lunch!What you need:2 tablespoons whole milk1 egg¾ cup Italian seasoned bread crumbs½ teaspoon garlic powder¼ teaspoon dried oregano¼ teaspoon dried basil¼ teaspoon dried thymesalt & pepper to taste½ (25 ounce) package frozen cheese ravioli, thawed2 cups vegetable oil for frying1 tablespoon grated Parmesan cheeseMarinara sauce for dipping How you make it:-Combine milk and egg in a small bowl. Combine breadcrumbs and seasonings in a shallow bowl. Dip ravioli in milk mixture, and coat with breadcrumbs. -In a large saucepan, heat marinara sauce over medium heat until bubbling. Reduce the heat to simmer. -In a large heavy pan, pour oil to depth of 2 inches. Heat oil over medium heat until a small amount of breading sizzles and turns brown. Fry ravioli, a few at a time, 1 minute on each side or until golden. Drain on paper towels. Sprinkle with Parmesan cheese and serve immediately with hot marinara sauce.

Broccoli and cheese Stuffed tilapia Ingredients: 4-ouncefresh or frozen skinless sole, flounder, or other fish fillets, about 1/4 inch thick 1 cupfrozen cut broccoli, thawed 1 beaten egg 1 8-ounce containersoft-style cream cheese with chives and onion 1/4 cupgrated Parmesan cheese 3/4 cupherb-seasoned stuffing mix 2 tablespoonsmilk 2 tablespoonsdry white wine Instructions: 1. Thaw fish, if frozen. Rinse fish and pat dry with paper towels. For stuffing, drain broccoli, pressing out excess liquid. Combine egg, half of the cream cheese, and the Parmesan cheese. Stir in broccoli and stuffing mix. Spoon one-fourth of the stuffing onto an end of each fillet. Roll up, securing rolls with wooden toothpicks. Place fish in a greased 2-quart square baking dish. Bake, covered, in a 350 degree F oven for 30 to 35 minutes or until fish flakes easily with a fork and stuffing is hot. 2. Meanwhile, for sauce, in a small saucepan cook remaining cream cheese, milk, and wine until heated through, stirring often. Serve sauce over fish. Makes 4 servings.

Who knew - add baking soda to the water when hard boiling eggs and the shell will come right off ~~ add 1/2 tsp of baking soda to the water it will make the egg shell easier to peel. Don't know if it works?

About Mom’s Baked Chicken & Spinach Pasta February 23rd, 2010 | Filed under: entree, recipe | Tags: casserole, cheese, garlic, pasta, spinach For the past couple of months, Tom and I have been training for the A1A (Beach-front avenue!) Half Marathon and Sunday was the Big Day. For me, training was both exhilarating – you feel so accomplished when you’ve run a 10K before breakfast – and painful – patellar tendinitis isn’t particularly fun. Training made me hungry, made me hobble around like an old lady, made me stop drinking beer and wine on Saturday nights (the worst part by far) and made me actually stop wearing heels. On the Big Day, we woke up at 3:30AM and had some homemade power bars and bananas and were on our way. The weather was great – 60 degrees – and we started our run heading east toward the most beautiful sunrise over the ocean. I didn’t have my best run, but Tom ran with me (almost) the whole way and my official time was 2:05:15. We crossed the finish line with our families cheering us on and then celebrated with a nice, big breakfast of French Toast, Eggs, Bacon and Bloody Marys. All in all, a wonderful, completely exhausting day. So, what does all that have to do with Baked Chicken & Spinach Pasta? Well, it was all part of our pre-race meal. This dish is one of those things my mom made all the time when I was growing up and my brother and I loved like crazy. It’s a super simple recipe: sauteed chicken with lots of garlic, olive oil, spinach and white wine all tossed with pasta, covered with cheese and baked. Delicious. So, I made a batch and my mother-in-law made Tom’s favorite spaghetti and meat sauce and we all carbo-loaded on Saturday night before the Big Day. Perfect pre-marathon food, but good pretty much all the time. And now, I’ll happily return to beer and wine on Saturday nights, heels at work and a lot less pasta recipes on the site. Print This! Mom’s Baked Chicken & Spinach Pasta 1 lb. pasta (I used whole wheat shells) 4 boneless, skinless chicken breasts (about 2 lbs.), diced 1/4 cup olive oil 8 cloves garlic, minced 1 tsp. salt 5 cups fresh spinach, chopped 1/4 cup white wine 2 cups mozzarella cheese Preheat the oven to 350°. Set a large pot of water to boil. Once it comes to a rolling boil, salt it and cook the pasta until just al dente. Drain. While the pasta is cooking, set a large skillet over medium heat. Once it’s hot, heat the olive oil then add the chicken. Brown the chicken on all sides – about 10 minutes. Add the garlic and simmer with the chicken until it’s fragrant and begins to turn golden – about 3 minutes. Add the salt. spinach and white wine to the skillet and cook for an additional 3 – 5 minutes, or until the spinach begins to wilt. Toss the contents of the skillet with the pasta and place in a casserole dish. Cover with cheese and bake for 25 minutes. Makes about 8 servings.

Grilled Chicken Rigatoni Florentine and other pasta dishes
Grilled Chicken Rigatoni Florentine This dish is Italian-inspired comfort food at its finest. It’s a long recipe, but the results are well worth the effort. Although the concept is simple, it’s largely made from scratch. You could certainly substitute more pre-packaged ingredients, but the result won’t be the same. Ingredients 8 Chicken thighs, boneless and skinless 1 1/2 lb Dry rigatoni 16 oz Frozen spinach, thawed 16 oz Heavy whipping cream 4 cups Milk, 2% 8 oz Sour cream 1 cup Italian three-cheese blend (Parmesan, Asiago & Romano) 2 Tbsp Butter, unsalted 2 Tbsp Canola or vegetable oil 2 Tbsp All-purpose flour 1 1/2 Tbsp Garlic, minced 2 tsp Garlic salt 2 tsp Kosher salt 1 tsp Black pepper, ground fresh 1/2 tsp White pepper Dash Cayenne Dash Nutmeg Method Trim any excess fat from the chicken thighs. Season both sides of the chicken evenly with the garlic salt and the black pepper. Set aside and let sit 30 minutes at room temperature. Start your grill and prepare for direct cooking at medium-high heat (400-450º). Cook the pasta per the package directions until it is just shy of al dente, then drain it well. Note: You want the pasta a little underdone because it will finish cooking when it’s baked. While the pasta is cooking, brush the chicken with one tablespoon of the canola/vegetable oil and grill it over direct heat for three minutes per side. Remove the chicken to a plate and set aside. Pour the thawed spinach on top of the draining pasta and stir to allow it to drain simultaneously. Preheat your oven to 350º. Heat a large sauce pan over medium-high heat. Add the butter and the other tablespoon of canola/vegetable oil and let heat 30 seconds. Add the flour and whisk constantly to make a roux. You want a blonde roux, so cook it until it just starts to give off a nutty aroma. Add the cream to the pan and bring just to a slight boil, whisking constantly. Add the milk, salt, garlic, white pepper, cayenne and nutmeg to the pan and bring back to a slight boil, whisking constantly. Add the cheese and sour cream to the pan and bring it back to a simmer, whisking constantly. Remove the sauce from the heat. Note: The sauce will be a little thin, but that’s intentional, as it will thicken when baked with the pasta. Slice the chicken to 1/4” and add put it in a large mixing bowl. Add the pasta and spinach to the bowl. Add the sauce to the bowl and fold to combine all of the ingredients. Pour the pasta mixture into a very large baking dish. Cover the baking dish with foil, and bake 40 minutes. Plate the pasta with shaved Parmesan.

Cheesy Zucchini bake If you like zucchini, fresh basil, and cheese, you'll love this Easy Cheesy Zucchini Bake. When I noticed how many people are visiting my round-up of 20 Zucchini Recipes I knew it was time to share this fantastic new zucchini recipe called Easy Cheesy Zucchini Bake, recommended by my sister Pam. She found the recipe in Penzeys Back to School 2011 Catalog , where it was submitted by Karen Niessing. Pam changed the recipe a little and then I changed it a tiny bit more, and we were both impressed with how this very basic idea of tossing zucchini with a few fresh and dried herbs and cheese and then baking it can produce a dish that's so delicious. I could make an entire meal of this, but it would also be perfect as a zucchini side dish, and Pam told me she ate some of her leftovers for breakfast one day. If you have zucchini from your garden or the farmers market, you must try this! This was my latest picking of zucchini and straightneck squash, and I used the four in the front in this recipe. If you had really small zucchini you could just slice them, but I cut mine in half lengthwise and then into half-moon slices. The recipe called for dried basil. Pam used about a tablespoon of chopped fresh basil. I bumped it up to nearly 4 tablespoons of fresh basil. You can adjust the amount of basil to your own tastebuds. Pam had the idea of adding a few tablespoons of sliced green onions, which I thought was perfect in this recipe. To keep this dish South Beach Diet friendly, I used this low-fat blend called Pizza Cheese. It's a mixture of Mozzarella, Provolone, Romano, and Parmesan cheeses with only 6 grams of fat in 1/4 cup. (You could use any type of low-fat white cheese.) Toss together the sliced squash, chopped basil, sliced green onions, dried thyme, garlic powder, and both kinds of cheese. Season with salt and fresh ground black pepper. Put the mixture into an 8" x 8" casserole dish that you've sprayed with olive oil or non-stick spray. Bake 25-30 minutes, then sprinkle over another 1/2 cup of the pizza cheese. Bake 10-15 minutes more, or until the cheese is melted and nicely browned and the zucchini is cooked through. Serve hot. Easy Cheesy Zucchini Bake (Makes 4-6 servings; recipe adapted from a recipe by Karen Niessing in Penzeys Back to School 2011 Catalog, with suggestions from my sister Pam.) Ingredients: 2 medium-sized zucchini, cut in slices or half-moon slices 2 medium-sized yellow squash, cut in slices or half-moon slices 2-4 T chopped fresh basil (or even less, depending on how much you like the flavor of basil) 2 T thinly sliced green onion 1/2 tsp. dried thyme 3/4 tsp. garlic powder 1/2 cup + 1/2 cup low-fat white cheese (I used Pizza Cheese, which is a low-fat blend of Mozzarella, Provolone, Romano, and Parmesan) 1/2 cup coarsely grated Parmesan (I would use a little less if you only have the very finely grated Parmesan from a can) salt and fresh ground black pepper to taste Instructions: Preheat oven to 350F/180C. Spray an 8" x 8" baking dish with olive oil or non-stick spray. Wash the squash and cut in slices or half-moon slices. Wash basil, spin dry or dry with paper towels and finely chop. Slice green onions. Combine the sliced squash, chopped basil, sliced green onions, dried thyme, garlic powder, and both kinds of cheese and stir together until the veggies are coated with cheese and the herbs are well-distributed. Season with salt and fresh ground black pepper. Put the mixture in the baking dish and bake uncovered for about 25-30 minutes. When the zucchini is nearly cooked through, take the casserole dish out of the oven and sprinkle over the remaining 1/2 cup of grated cheese. Put the dish back in the oven and bake 10-15 minutes longer, or until the cheese is melted and nicely browned and zucchini is fully cooked. Serve hot.

Homemade poptarts: I did this tonight. It is easy and tastes wonderful. I used my homemade jam.I always use Kroger brand refrigerated pie crust. It is still a dessert, maybe best for birthdays. My kids will have it for breakfast in the morning and they will be thrilled. I will make them drink a huge glass of milk. And the milk they drink and fruit I used in the fructose corn syrup-free jam will be the only redemptive qualities about it. Pie for breakfast : ) Yum!

Crash Potatoes 12-15 baby red potatoes 1 tbsp olive oil Sea salt and fresh cracked pepper Preheat the oven to 425 degrees Boil the potatoes for 10-15 minutes or until fork tender. Place on a cooking sheet coated with cooking spray or drizzled with olive oil. Place the potatoes on the baking sheet and with a potato masher, gently smash each potato. Drizzle with olive oil, sea salt and pepper (add a bit of your favorite dry herbs). Bake in the oven for 20-25 minutes until crisp golden brown.
