South Beach Diet Recipes (phase 1)
I feel like this "diet" is not really a diet. You are just cutting out the crap that you eat daily. Phase 1 is the most difficult for me because I always want to fill our plates with those "bad carbs" instead of good ones like veggies. So here are lots of recipes so you don't get bored on Phase 1!

Low Carb/Paleo Green Chile and Chicken Mock Enchilada Casserole Tuesday, January 28, 2014 Green Chile and Chicken Mock Enchilada Casserole (Low-Carb, Gluten-Free) Save recipes all over the web with your personal recipe box. This Green Chile and Chicken Mock Enchilada Casserole has all the flavors you love in green chile chicken enchiladas, minus the carbs! This new recipe for Green Chile and Chicken Mock Enchilada Casserole is not only perfect for Daily Phase One Recipes, but the recipe is also Low-Carb and Gluten-Free, and I have a feeling this one is going to have a lot of fans. To make this suitable for Phase One, I replaced the tortillas with layers of mild roasted green chiles from a can, and also used Hatch Gluten Free Green Chile Enchilada sauce, a brand new product I found at my store. When I tested the recipe with Jake, we loved the flavors, and I shared some with my sister Pam and everyone in her family loved it too. I've already made this twice in a week; if you like that spicy green chile flavor, make sure you give this one a try! (You can see all the recipes from the month by clicking Daily Phase One Recipes. Check after the recipe for Phase One Flashbacks from this day in 2012 and 2013.) Trim four boneless, skinless chicken breasts and then cut each one in half lengthwise. Put the chicken breasts in a smallish pan, cover with water, and simmer over low heat until the chicken is cooked through. Here's an iPhone photo of the Gluten Free Hatch Chicken Enchilada Sauce that partly inspired this recipe. If you can't find this, another gluten-free brand is La Victoria. You can use mild or medium enchilada sauce, but if you don't like a lot of heat or you're cooking for kids I would use mild. Simmer the green chile enchilada sauce until it's thickened and reduced to 2 cups. As soon as the chicken is done, drain it in a colander and then remove to a cutting board to cool. Put the colander back into the sink and drain the can of whole roasted green chiles. Then use your fingers to split each green chile and remove the seeds, making them into two equal piles so you can make two layers of chiles in the casserole. When it's cool enough to handle, shred the chicken apart into bite-sized pieces. When the enchilada sauce has reduced to 2 cups, turn off the heat and then whisk in the cream cheese and sour cream. Spray a crockery or glass baking dish with non-stick spray and make a layer of green chiles. Make a layer of chicken over the green chiles. Spread half the sauce over the chicken. And sprinkle half the cheese over the sauce. Make another layer each of whole roasted green chiles, chicken, sauce, and cheese. Bake uncovered at 375F/190C until the casserole is bubbling and the cheese on top is getting browned. Let cool about 5 minutes, then cut and eat while it's hot. This will keep in the fridge for several days and can be reheated in the microwave, and it also freezes well. Green Chile and Chicken Mock Enchilada Casserole (Makes 8 servings; recipe created by Kalyn.) Ingredients: 4 boneless, skinless chicken breasts, trimmed and cut in half lengthwise into two pieces 2 cans (15 oz.) mild or medium green chile enchilada sauce (If you need gluten-free, look for Hatch Gluten Free or La Victoria brand. I found Green Chile Enchilada Sauce at Amazon.com, but on the day I checked they didn't have the gluten-free variety yet.) Whole Green Chilies, 27-Ounce Can (I found Hatch Whole Green Chilies, 27-Ounce can at Amazon.com, but they are more expensive that way.) 4 oz. reduced-fat cream cheese, room temperature 1/2 cup low-fat sour cream 2 cups grated low-fat mozzarella Instructions: Preheat oven to 375F/190 C. Spray a 9-inch x 13-inch casserole dish with non-stick spray. (I recommend using a glass or crockery casserole dish; any size that is close to that will work.) Trim visible fat and other undesirable parts from chicken breasts and cut each one in half lengthwise. Put chicken into a small shallow pan, cover with water, and simmer over low heat until the chicken is done, about 15 minutes. Drain chicken into a colander in the sink (you can rinse if there's a lot of scum.) Remove to cutting board to cool. Put the enchilada sauce into a small saucepan and simmer over low heat until the sauce has thickened and reduced to 2 cups, about 20 minutes. (I'm not that good at eyeballing it, so I put it in a measuring cup to measure when I think it's getting close.) Turn off the heat and stir in the cream cheese and sour cream. After you remove the chicken, drain the can of whole green chiles into the colander and let them drain for a few minutes. Then one at a time, use your fingers to split the chiles open and remove the seeds, piling them into two piles so you can make two equal layers in the casserole. (If chiles still seem wet, you can blot them with a paper towel, but I didn't need to do that.) When the chicken is cool enough to handle, shred apart into bite-sized pieces. Layer half the green chiles into the bottom of the casserole dish, arranging them so the whole surface is covered as much as you can. Over that make a layer of half the chicken, 1 1/2 cups of the sauce, and 1 cup of the grated cheese. Make another layer each of green chiles, chicken, sauce, and cheese. Bake uncovered until the casserole is bubbling and cheese is melted and browning on top, about 40 minutes. Let sit about 5 minutes before cutting. Serve hot. This will keep in the fridge for several days and can be reheated in the microwave, and also freezes well. Recipe question: In the printed directions you say to reduce the sauce to 2 cups then put 1 1/2 cups of the sauce over the first layer and the rest (just 1/2 cup?)on the top layer. With the pictures you say put half the sauce over the first layer and the other half on the top (1 cup each). Which is it? Would love to make this for my wife and I tonight. Thanks. So when you're layering you put 1 1/2 cups (half the finished sauce) over the first layer and 1 1/2 cups (the other half of the finished sauce) over the second layer. 1. Portabello “Sandwich Bread” Grilled portabello mushrooms provide savory bread substitute for sandwiches. Get the recipe from Food For My Family. 2. Butternut Flatbread My reliable Grain Free Butternut Flatbread comes together in a flash. These save well in an airtight container in the fridge for a day or two, but they are still best they day they are made. I haven’t tried freezing them but I’m guessing they will freeze well. 3. Tomato Slider Sandwiches Brilliantly simple tomato sandwiches. Slice a tomato and stuff with your fillings of choice! The trick is removing the seeds to prevent the juice running out when you bite it. Get the recipe at The Iron You. 4. Cucumber Boats Hollowed out cucumbers make another one-ingredient shell for sandwich fillings. The picture in the collage above is from Make The Best of Everything. You can also peel the cucumber, if desired. 5. Plantain Tortillas To satisfy a wrap craving, try rolling up a Plantain Tortilla. (Plantains contain a concentration of starch and they are not suitable for the SCD or GAPS Diet) 6. Cauliflower Wraps I have already sung the praises of cauliflower in my top 10 uses for the versatile veggie. One of my most popular recipes, Cauliflower Wraps, provides a tasty wrap for lightweight fillings. 7. Tapioca Wraps My waters just looking at these grain-free Tapioca Wraps stuffed with melted cheese. (The wraps also contain cheese as a binder and the tapioca flour is not suitable for SCD/GAPS diet). 8. Eggplant Bread Sandwiches Simply slice eggplant lengthwise, grill lightly, and fill with your favorite sandwich fixings. Marathon Momentos gives a quick explanation and offers a really tasty filling combination. 9. Sweet Potato Sandwich Buns Sweet potato buns look like a great substitute for hamburger buns and for sandwich bread. This recipe from Paleo Fondue includes coconut and tapioca flour. 10. Bell Pepper Sandwich Slices For a colorful and crunchy bread alternative, try slices of bell pepper. The Primal Parent shows us this creative sandwich solution. 11. Cauliflower Sandwich Thins These Cauliflower Sandwich Thins are very similar to the Cauliflower Wraps but it skips the step of steaming and squeezing the cauliflower. I found that step was important to creating a flexible, dry texture in the wraps. These thins may be simpler to prepare but I don’t think they will be as pliable. 12. Grain Free Hamburger Buns There are numerous recipes for grain free hamburger buns, which made excellent sandwiches. Try Sesame Hamburger Buns from The Paleo Mom or Coconut Flour Hamburger Buns from SCD Foodie. 13. Butternut Squash or Sweet Potato Sandwich Rounds Simply slice peeled sweet potatoes or a butternut squash (the stem end) into 1/4 inch thick rounds. Toss with coconut oil and roast at 400 degrees F. Bake for about 30 minutes, until tender but firm. The baked squash/sweet potato rounds make a sandwich bread substitute. You can see step-by-step instructions in my Butternut Squash Pizza Crust recipe. 14. Oopsie Sandwich Bread Flourless Oopsie Bread makes a great substitute for bread. The recipe calls for cream cheese. For those on the SCD or GAPS diet, substitute my homemade goat cheese or dripped homemade yogurt. 15. Lettuce Cups Lettuce cups are another favorite wrap for sandwich innards. Butter lettuce leaves and romaine lettuce leaves make good options. It seems busier than ever and I’m not sure why. Maybe because my kids are getting older, which means more to do, and there was a bit of traveling during November to keep us on our toes. I can hardly believe Christmas is less than 2 weeks away. I have two Christmas parties to attend this week! I’m all about keeping things simple this year. These Cucumber Feta Rolls are perfect for keeping Holiday entertaining simple. And they’re a snap to make when you use a Mandoline Slicer to slice up the cucumbers. I’ve never had or made Cucumber Rolls before making this recipe, but I loved the flavors of feta with kalamata olives and sundried tomatoes inside refreshing cucumbers. The filling is super quick to whip up, and could even be used as a dip to go with vegetables (think sliced cucumber rounds and bell pepper strips) and toasted pita chips. Cucumber Feta Rolls Yield: approximately 20 rolls Prep Time: 15 - 20 minutes Total Time: 15 - 20 minutes Print Save Recipe Ingredients: 2 cucumbers 6 ounces crumbled feta 3 tablespoons Greek yogurt 2 1/2 - 3 1/2 tablespoons finely diced sundried tomatoes or red bell pepper 8 - 12 pitted kalamata olives, roughly chopped 1 tablespoon roughly chopped dill or oregano 2 teaspoons lemon juice pinch of pepper, or to taste Directions: Thinly slice the cucumbers longways on a mandoline at a 2mm thick setting. Alternatively, you can use a vegetable peeler if you do not have a mandoline. Lay the cucumbers on top of a paper towel lined cutting board while you prepare the filling. Add the feta and yogurt to a medium bowl. Mash to combine using a fork. Add the bell pepper or sun dried tomatoes, olives, dill, lemon, and pepper to the bowl. Stir well to combine. In a bowl, mash the feta using a fork. Place 1 - 2 teaspoons of mixture at one end of a cucumber strip and roll up. Secure with a toothpick. Repeat with remaining strips. If not serving immediately, chill until ready to serve. adapted from Taste

Ginger and Cilantro Baked Tilapia serves 2 1 pound domestically farmed tilapia fillets Kosher salt and freshly ground pepper 3 garlic cloves, peeled and smashed 1 inch fresh ginger, grated, about 1 tablespoon 1 jalapeño pepper, roughly chopped (optional) 1/3 cup roughly chopped cilantro leaves 1/4 cup white wine 2 tablespoons soy sauce 1 teaspoon sesame oil Scallions, chopped for garnish Extra cilantro, to garnish Heat the oven to 475°F. Pat the fish dry, season lightly with salt and pepper, and lay in a 9x9-inch or 8x8-inch ceramic or glass baking dish. Put the garlic, grated ginger, chopped jalapeño, and cilantro in a small food processor with the white wine, soy sauce, and sesame oil. Whir until blended. (Alternately, you can finely chop or mash the aromatics in a mortar and pestle, then whisk together with the liquid ingredients.) Pour the sauce over the fish, rubbing it in a little. Bake for 8 to 10 minutes, or until the fish flakes easily and is cooked through. It will be very moist and even a little gelatinous, still. Serve immediately over brown rice or orzo, garnished with the additional scallions and cilantro.
