CSA: Summer Share

Gone are the leafy vegetables of spring! July and August are the peak of nightshade season: tomatoes big and small, peppers, and eggplant come pouring in. We also see summer squash, potatoes and carrots, and a LOT of corn. Stone fruits and berries arrive at the market. In the summer, I make a lot of Italian and Tex-Mex-inspired dishes and a few curries to change things up, as well as raw salads (sans lettuce) and slaws.

From Table Matters, an heirloom tomato and cornmeal upside-down cake. This turned out pretty good, although don't forget (as I did) that ripe tomatoes hold a LOT of water. When I turned the cake over, it released a gush of tomato water although the bottom of the cake was quite browned and done. This might have been avoided by baking lower and slower, or by using less overripe tomatoes.
