Paula Deen French Onion Pork Chops. I made these for dinner. Excellent. Super easy. My husband loved them. (I didn't have boneless pork chops, though. But good either way.) For breadcrumbs, I put some old hot dog buns in the oven for a few minutes, then put in the mini food processor. Delicious!
Paula Deen French Onion Pork Chops 4 boneless pork chops 2 packs of french onion soup mix 1/2 cup breadcrumbs 2 eggs Directions Preheat oven to 400 degrees F. In one pan, crack the egg and beat it. In another mix together the breadcrumbs and soup mix. Coat the pork chops with the beaten egg, and then with the breadcrumb mixture; take care to coat both sides. Place pork chops on a baking sheet and bake for 20 minutes, flipping after 10 minutes.

Baked zucchini fries and bloomin onion dipping sauce. (Substitute non-fat greek yogurt for the mayo.) Dip 1 tablespoon butter 1 medium sweet onion, about 1/2 pound, peeled and sliced 2 tablespoons cider vinegar 2 tablespoons honey 1 tablespoon prepared mustard 1 cup mayonnaise salt and pepper to taste Zucchini sticks 3 medium zucchini, unpeeled, cut into 3"-long stick 1 tablespoon salt 1 cup coarse, dry bread crumbs (e.g., panko) scant 1/2 cup freshly grated Parmesan cheese 1 tablespoon Pizza Seasoning or mixed Italian herbs olive oil spray 1/2 cup egg substitute; or 2 large eggs; or 3 egg whites, lightly beaten Directions 1) To make the dip: Melt the butter in a medium frying pan over moderate heat, and add the sliced onions. Cook, stirring occasionally, until the onions soften, then caramelize. This should take between 10 and 15 minutes. The lower the heat, the longer it takes, but the less likely you are to burn the onions. 2) Once the onions are a medium brown, remove from the heat and add the vinegar. 3) Place the onions and vinegar into a small food processor. Add the honey and mustard, and process or blend until smooth. 4) Add the mayonnaise and salt and pepper to taste, stirring to combine. Refrigerate, covered, until ready to serve. 5) To make the zucchini sticks: Place the zucchini sticks in a colander over a bowl and sprinkle with the tablespoon of salt. Let the zucchini drain for 1 hour or longer; rinse and pat dry. 6) Combine the Panko, Parmesan, and pizza seasoning; set aside. 7) Preheat the oven to 425°F. Line a baking sheet with parchment, and spray the parchment with olive oil. 8) Dredge sticks a few at a time in the egg, then roll in the crumb mixture. Place the sticks on the prepared baking sheet. 9) Bake sticks for 12 minutes, turn over, and bake for an additional 8 minutes, until golden brown and crisp. 10) Serve immediately, with sweet onion dip. Yield: about 3 dozen zucchini sticks, and 1 1/2 cups dip.

Sauce: 8 ounces of your choice of pasta, 2 Tbs of olive oil, 3 cloves of garlic, 2 spoonfuls of pesto, 1/2 c of chicken broth, 8 oz of tomato sauce, 1 c of half and half Boil water and start on noodles.

I made some changes to reduce sodium: used low-sodium chicken broth, no salt added tomato sauce, and found a marinade with 1/2 the sodium of Lawry's. Because the pesto and (even reduced) marinade are still VERY high sodium, it still had plenty of flavor. Next time, I'm going to use a bit less olive oil.

7 Layer Tostadas - Huge hit tonight! I followed the recipe, starting with toasted ww tortillas then layered on organic refried beans, fresh guac and vegan sour cream that I spiced up (cumin, chipotle chili, cayenne etc)... From here the family added the toppings of their choice. Options were vegan cheese, blk olives, tomatoes, red onion, gr onion, fresh jalepeno & salsa. Chopping all the veggies and making the guac made this take longer than I would have liked but the end result was worth it.
Seven-Layer Tostadas (Makes 6-8 tostadas, depending on the size of whole wheat tortillas used; recipe created by Kalyn with inspiration from years of eating Seven Layer Dip at Denny family parties!) Ingredients: 1 can (16 oz.) refried pinto beans (or use homemade refried beans) 1 1/2 cups guacamole (purchased or homemade guacamole) 1 cup light sour cream 1/2 tsp.
