Homemade healthy Quiche Cups! 1 - package of frozen chopped spinach, thawed. 1- package (8 ounce) low fat shredded cheese of your choice. 1- small container of Egg Beater's, any flavor Cook the spinach so all water is drained and it's warm. Mix the spinach, egg beaters and cheese in a bowl, and add salt and pepper. Spoon it into muffin cups for portion control. Cook for 30-40 minutes on 350, and waaa-la! Each cup is about 65 - 80 calories.
