Try Michael Solomonov's recipe for hummus, which is fantastic even if you cheat on the recipe and use canned chickpeas instead of fresh. It's even more so if you use it as a base for a pile of spiced ground beef, cut through with some onion, garlic, pine nuts and healthy sprinkles of salt, paprika, cumin and cinnamon. Fry that up, and spoon it all down with warm pita.
