Toasted Sesame Ginger Salmon. BEST salmon dish! Use dark brown sugar and don't forget a dash of salt and pepper before cooking. Broil, 2nd rack from top, skin side down first, then flip with 3 minutes to go. (Don't throw the marinade out! Marinade small cuts of chicken thigh fillets overnight. Coat with a mix of 1c all-purpose flour, 2tbsp corn flour, 1tbsp each cayenne and paprika, 1 tbsp each salt and pepper; dip in beaten egg and repeat. Fry on medium heat.)

Made this for dinner yesterday and it is soooo good! I used a packet of Good Seasons dry Italian dressing mix for the seasonings. Zucchini Chips These are good--and I've done them with squash too! I slice them thin, dip in egg/milk mixture then roll in original flavored bread crumbs with panko. Salt, pepper, paprika and spray the top with olive oil cooking spray. Bake at 350 until brown and crisp. We like them dipped in Ranch dressing, but tonight I'm going to mix up some "fake" Cane's sauce!

(baked) Ingredients: ■1/4 cup Homemade Breadcrumbs ■1/4 cup grated Parmesan cheese (optional) ■1/8 tsp black pepper ■heaping 1/2 cup whole wheat flour ■1 cup cold milk (I used oat milk) ■1 tsp apple cider vinegar ■2 1/2 cups sliced zucchini (about 2 small zucchinis) Preparation: 1.Preheat oven to 425 degrees. 2.In a medium bowl combine breadcrumbs, cheese (if using) and black pepper. 3.In separate bowl add flour, milk and vinegar. Gently stir until combined but do not over stir. 4.Dip zucchini slices in flour mixture and then dredge in breadcrumb mixture. 5.Place coated zucchini slices on a baking sheet (I line mine with non stick foil for easy clean up!) and bake for 30 minutes, flipping the slices over once halfway through cooking, or until browned and crisp. Nutritional Info: Makes 2 servings. Nutrients per serving: Calories: 224.5, Cal. from Fat: 33.5, Total Fat: 3.5g, Sat. Steakhouse Sautéed Mushrooms 3 Tablespoons butter 1 pound fresh mushrooms, sliced (I used a mixture of white, baby bella and shiitake) 1 Tbsp dried minced onion 1/4 cup dry white wine 1/4 tsp salt 1/4 tsp pepper 1 clove garlic, pressed 2 tsp Worcestershire sauce Melt butter in large skillet. Add mushrooms and sauté for a few minutes, until mushrooms start to soften. Stir in remaining ingredients and cook uncovered over low heat for 30 minutes or until mushrooms are tender.
