Zucchini Fries: These fast-food fry knock-offs are not just tasty—they're good for you, too. Swap any summer squash for the zucchini and try different seasoning mixes. 3 Ingredients 4 spray(s) olive oil cooking spray 1 tsp Italian seasoning 1 1/2 Tbsp all purpose flour 3/4 tsp table salt 3/4 cup(s) dried plain breadcrumbs, panko-variety suggested 2 medium uncooked zucchini 2 large egg white(s), whipped until frothy (almost soft peaks) Instructions 1. Preheat oven to 425ºF. Coat a baking sheet with cooking spray. In a small bowl, mix together Italian seasoning, flour and salt. Place bread crumbs in another small bowl. 2. Slice each zucchini in half lengthwise and then each half into 2 pieces widthwise. Next slice each zucchini chunk into 4 fries. Dredge a zucchini fry in flour mixture and then dip into egg whites; dredge in bread crumbs. Place coated zucchini on prepared baking sheet and repeat with remaining ingredients; liberally coat with cooking spray. 3. Roast, turning once, until desired crispness, about 12 minutes. Yields about 8 fries per serving. Notes: Use this technique with any summer squash or eggplant. It also works great with thick-cut onion rings or even green tomatoes. For extra crispy fries, increase the oven temperature to 500ºF and knock 2 minutes off the cooking time. Crunchy Honey Garlic Pork Chops Recipe! Ingredients 6 to 9 pork chops, not to thick 2 eggs 4 Tbsp water 2 c flour 1 tsp salt and pepper 1 tsp garlic powder canola oil or vegetable for frying FOR THE GLAZE 1 1/2 c honey 1/2 c brown sugar 1/2 tsp ginger 1 dash(es) cayenne pepper, or to your taste 1/2 c soy sauce 1 Tbsp garlic, chopped 2 Tbsp butter Directions 1. Whisk the eggs and 4 tablespoons water in a shallow dish. 2. Mix the flour, salt, pepper and garlic powder in another shallow dish. 3. Dip the chops in the flour, then over into the egg, then back over into the flour mixture again. 4. This is what puts the extra crispy coating on the chops. 5. Be sure to get plenty of flour on this last coating, then shake them a little and place in a pan with about a half inch of oil. 6. Be sure the oil is hot, but not to hot or the chops will cook to fast. You need to get it good and hot and then turn to about medium. 7. Cook for about 6 minutes on each side. Try not to turn more than twice or your breading will come off. 8. Remove from the pan to a 9x13 baking dish. 9. Saute the garlic a little in the butter. Add the honey, soy sauce, brown sugar, cayenne and garlic. 10. Bring to a boil then reduce to low and simmer for about 5 minutes. Watch this carefully because it will foam and might boil over. 11. Pour 1/2 of the glaze over the pork chops. Flip them over and pour the other 1/2 over the other side. 12. Place uncovered in a preheated 350 oven for about 20-25 minutes. This sets the glaze and finishes them to be sure they are cooked through.

Thai Chicken Salad with Spicy Peanut Sauce Thai Chicken Salad (recipe adapted from Taste and Tell) serves 8 Chicken marinade 1/2 C vegetable oil 2 Tb rice vinegar 1/4 C sugar or 2 Tb Truvia 1 clove garlic, minced 1/2 bunch cilantro, chopped 1 lime, juiced dash of salt and pepper 4 boneless, skinless chicken breasts - about 2 1/2 pounds total Salad 2 hearts of romaine, chopped 1/2 large head of napa cabbage, chopped 1 cucumber, peeled, seeded and chopped 2 carrots, shredded 1 red bell pepper, chopped 5 green onions, chopped 1/2 bunch of cilantro, chopped 1 C salted peanuts Dressing 1/4 C rice vinegar 1/4 C Thai sweet red chili sauce 1 tsp sesame oil 1/2 tsp sugar or Truvia pinch of salt and pepper Peanut Sauce 1/4 C natural peanut butter 2 Tb soy sauce 1 Tb rice vinegar 1 Tb Thai sweet red chili sauce 2 Tb water 1. In a ziplock bag, combine all the ingredients for the chicken marinade. Mush it all around, then place it in the fridge for at least 4 hours to marinade. Cook the chicken either on a hot grill, 6-8 minutes a side or in a 350 degree oven for 40 minutes. Allow it to cool a bit, then chop up all the chicken into bite sized pieces. 2. Combine all the salad ingredients in a large bowl, except for the peanuts, then add the chicken. Combine all the dressing ingredients then pour over the salad. Toss until the salad is evenly coated with the dressing. Dish out the individual servings of the salad. 3. Stir together the ingredients for the peanut sauce in a small bowl. If the sauce is too thick to drizzle, add a bit more water. Generously drizzle the peanut sauce over each serving of salad then top with the peanuts. recipe printed from mykitchenescapades.com
