* Oven Baked Chicken Fajitas : two bell peppers, half of a large onion, and chicken breasts- all cut into strips- place in a greased 9x13. Mix 2 tbsp of oil with a packet of oretega fajita seasoning and a shake each of chipotle powder and chili powder. Pour the mixture over the chicken and veggies, stir to coat, and bake at 400 for 20-30 mins or until veggies are done to your liking.
Taco Pizza is a great as an easy family dinner (you can even make it the night before) or a tasty appetizer. Kids love this recipe and the cream cheese/sour cream “sauce” and spicy taco flavor are a hit with adults too.
Stir together Cream Cheese, Shredded Cheese, and Taco Seasoning. Fold in the shredded meat, Divide the mix into the tortillas and roll up. Spray the tops with cooking spray and bake for 30 minutes at 350. (flip them at 15 minutes) Garnish with sour cream...and chives...and salsa...and more cheese :)
