Fruity Pebbles Cupcakes!  Sound sooooo much better than "funfetti".  Making these for my daughter's St. Patty's Day birthday party with Lucky Charms on top.

JELLO FROSTING - 3 ounce pkg. of Jello any flavor; 2/3 cup granulated sugar; 1 egg white; 1 teaspoon vanilla. Place the above ingredients in a large GLASS OR METAL mixing bowl OF A STAND MIXER. Turn the mixer on high and immediately add ½ cup of boiling water, that you let run down the inside of the bowl so it cools a bit before hitting the egg whites. Whip on high for five minutes! Frosts 24 cup-cakes or a 13x9 cake. Pipes well for decorating.
