Cheesy Broccoli Quinoa - This worked out pretty well!  Between Quinoa being a superfood, and the arsenic warnings of rice, I decided to try this recipe.  To me,Quinoa tastes like a cross between brown rice and steel cut oats, so they're fairly bland by themselves.  Add cheese and broccoli though, and it's mighty tasty!

Cheesy Broccoli + Quinoa — 1 cup quinoa, well rinsed 1 cups chicken broth 2 cups broccoli, chopped 1 cup cheddar, shredded salt and pepper to taste Add quinoa, broth and broccoli to a large pot. Cover and simmer until tender add S and P and Cheese
