Oven Baked Parmesan Fries Oven Baked Parmesan Seasoned Fries NOTE: The amounts listed are for every one pound of fries. One pound of fries is the equivelant of appoximately 3 medium potatoes. (I just double or triple the recipe to fit within my needs). Ingredients: 1 pound of medium russet potatoes (approx 3 medium potatoes) 1 1/2 TBSP of Extra Virgin Olive Oil 1/4 tsp Dried Thyme 1/4 tsp Dried Oregano 1/8 tsp Dried Rosemary 1/4 tsp of Garlic Powder 1/4 tsp of Old Bay Seasoning 2 TBSP of Kraft Parmesan Style Grated Cheese (I used reduced fat) Directions: *Preheat oven to 425. *Wash and cut potatoes into 1/8ths. *Place on a cookie sheet that has been lined with foil (I used Reynolds Release foil so that they will not stick, but you could also either use non-stick cooking spray or lightly grease the top of the foil with extra virgin olive oil). *Mix all of the spices and the parmesan cheese in a small bowl. *Place all of the potatoes (remember we are talking about one pound at a time) into a gallon size freezer bag, add olive oil and the parmesan cheese/spice mixture to the bag. *Seal the bag and shake until the potatoes are evenly coated. *Once thoroughly coated dump onto the prepared cookie sheet and spread in a single layer. * Bake 30-45 minutes or until tender and lightly golden brown. (Baking times will vary depending on the amount of fries that you make and the size that you cut them). For the ones shown in the picture they were baked at 425 for 45 minutes. ENJOY!

Oven Baked Parmesan Seasoned Fries These fries ROCK plain and simple. Funny how one would still call them "fries" when really they are not "fried" in anything. Nope, these fries are too sophisticated for greasy oil, and much like a skinny swim suit model they prefer to be lightly oiled, slightly accentuated by a few minor spices and baked lying on a cookie sheet basking in the golden glow of the oven, BUT the one thing that sets these fries apart from the skinny swim suit model is that you can actually LOVE them instead of secretly hating them :) When we were still in PA, my neighbors RAVED over them and I mean RAVED! They could smell the wonderful aroma coming from the windows in the spring and would say "Oh my gosh" someone is cooking something that smells delicious! I once made the mistake of calling them "healthy French fries" and very promptly these little fry guys lost their appeal— that is UNTIL they tasted them!!! A few of the "manly men" of the neighborhood were still the naysayers of the bunch and only relented in a feeble attempt to silence my pleas to try them. Then it happened, they liked them, no wait they LOVED them!!! They urged their wives to get the recipe. So I typed it up and before you know it that very familiar smell began filling the air on our tiny little street. Red Velvet Cupcakes In A Jar YIELD: 8 servingsPREP TIME: 15 minutesCOOK TIME: 24 minutes INGREDIENTS: For the Cupcakes 1 cup cake flour 2 tablespoons unsweetened cocoa powder 1/2 teaspoon kosher salt 2/3 cup vegetable oil 3/4 granulated sugar 1 egg 1 teaspoon pure vanilla extract 2 tablespoons red food coloring 1/2 cup buttermilk 1/2 teaspoon baking soda 3/4 teaspoon white vinegar For the Cream Cheese Frosting 8 ounces cream cheese, softened to room temperature 3 tablespoons butter, softened to room temperature 1 pound confectioners’ sugar (about 3 ¾ cups), sifted 2 teaspoons clear vanilla extract* DIRECTIONS: For the Cupcakes 1. Preheat oven to 350 degrees. Line 12 cupcake wells with paper liners or spray pan with spray with nonstick cooking spray. 2. Sift together cake flour, cocoa powder, and salt. 3. In the bowl of a stand mixer fitted with the whisk attachment, combine oil and sugar until well-blended. Add egg and mix until combined. 4. Turn your mixer down to the lowest speed and add vanilla, then slowly add in the food coloring. Note: If you are using liquid food coloring, it will take about 2 tablespoons of coloring to get a dark red shade. I used about 1 tablespoon of gel dye to achieve the shade in the photographs. Add the dye slowly and color according to your preference. 5. Add flour mixture alternately with buttermilk in two batches; scrape down the side of the bowl. Continue mixing until just combined, taking care not to over mix. 6. Place baking soda in a small dish, stir in vinegar and add to batter with the machine running. Beat for about 10 seconds. 7. Using a medium scoop (about 3 tablespoons), divide batter between the 12 wells, filling each well about 2/3 full of batter. Bake for 20-24 minutes or until a toothpick inserted comes out clean. Be careful not to over bake. For the Cream Cheese Frosting 1. In a the bowl of a stand mixer fitted with the paddle attachment, cream together cream cheese and butter until well combined. 2. With the mixer on low, gradually add the confectioners’ sugar until thoroughly incorporated and smooth. Add vanilla and mix to combine. To Assemble in Jars 1. Slice cupcakes horizontally to create layers. Each cupcake will yield 2-3 layers depending on how thick you want your layers to be. 2. Place one cupcake layer into the bottom of your jar, pipe a layer of cream cheese frosting directly onto the cake layer. Repeat the layering process until you reach the top of your jar. If desired, garnish with festive sprinkles or red velvet cake crumbs. NOTES: - This cupcake recipe has been scaled down from the original recipe by The New York Times. Follow the link provided to view the full recipe. - Clear vanilla extract was used in the cream cheese frosting recipe to maintain a bright white color. This already iconic cookie had humble beginnings from being delivered from the back of a pickup truck and now commercially delivered to a grocery store near you. After seeing this cookie featured on Pinterest from Sweet Pea Kitchen, I knew that I had to make it. She also adapted the recipe from, recipesecrets.net . I used the recipe from sweet pea kitchen with the addition of more vanilla. Found that chilling the dough and working with small batches of the dough works best and using flour to prevent sticking. I brought these cookies to a couple of my offices this week and they were an overwhelming success. One person, who shall remain nameless, admitted to eating five in one day. Love it! I call myself a self-proclaimed “food pusher”. (It's a good thing) It brings me such joy to make things for other people and see the instant smile on their face. I decided on the traditional pink frosting, but you can get as creative as you want. What color would your frosting be? Enjoy!!! Lofthouse Style Frosted Sugar Cookies Cookies: 6 cups all purpose flour 1 t. baking soda 1 t. baking powder 1 c. butter, at room temperature 2 c. granulated sugar 3 eggs 2 t. vanilla extract 1 1/2 c. sour cream Frosting: 1 c. butter, room temperature 1 t. vanilla extract 4 c. powdered sugar 6 T. heavy cream Several drops food coloring Multi-colored Sprinkles Directions: In the bowl of a stand mixer with the flat beater attached, cream the butter and granulated sugar at medium speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the eggs, one at a time beating until each is incorporated. Add the vanilla and sour cream and beat at low speed until combined. Add the dry ingredients and beat at low speed until just combined, scraping down the bowl as needed. Dough will be a bit “sticky”. Divide dough into two sections. Flatten into rectangles about 1 1/2 inches thick, then wrap with plastic wrap. Chill in the refrigerator overnight or at least two hours until firm. Preheat the oven to 425 degrees. Line 2 large baking sheets with parchment paper or spray them with nonstick cooking spray, set aside. Use the plastic wrap that you chilled the dough in. Dust the top of the dough and then flip and flour the other side, keeping it on the plastic wrap. With a rolling pin, roll the dough out to 1/4-inch thickness. Using a 2 1/2-inch round cookie cutter, cut out circles and transfer to a baking sheet. Bake for 7 minutes, until pale golden. Immediately transfer cookies to a wire rack to cool. Best to work in small batches while keeping the remainder of the dough chilled. To make the frosting, in the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and vanilla. Slowly beat in the powdered sugar. Once smooth and creamy, add in heavy cream, 1 tablespoon at a time until the desired spreading consistency is achieved. If desired, add food coloring and beat until combined. Once cookies have cooled completely, frost and add sprinkles. Allow frosting to set, then store in an air-tight container. Let cookies sit for several hours before serving to allow the flavors to develop. Makes approximately: 5 to 6 dozen cookies (will vary on the thickness of the dough) NOTE: These cookies are pretty darn close to the ones you buy in the store however, I am sure that original lofthouse recipe is under "lock and key" so we may never be able to completely duplicate it 100%. I used the recipe that I found (as noted in the body of the post) and basically increased the amount of vanilla and working the dough in small batches, while keeping the rest chilled, works best. It is a very soft dough. I thought they were quite tasty, but I know that they may not appeal to everyone, since they do taste a bit different than the ones in the store but pretty close.

Homemade Krispy Kremes — Yes, this is the actual recipe! Donut Recipe: 3 tbsp milk 3 tbsp boiling water 1 tsp dry active yeast 8 oz all purpose flour (a little under 2 cups - I recommend you measure and weigh. See my note above)1 1/2 oz sugar (about 3 tablespoons) 1 egg 1 oz butter, cold to room temperature (just don't melt it, okay?) dash of salt Enough oil to cover the bottom few inches of a wok, or a deep fryer. Directions: In a large measuring jug, combine the milk and boiling water. Add a teaspoon of the sugar and the yeast. Stir it gently, then leave it in a warm place for the yeast to activate (aka foam).In a large mixing bowl, combine the flour, the rest of the sugar, and the salt. Cut in the butter using your fingers or a pastry blender, until it resembles crumbs.Add the egg (give it a quick beat) and yeast mixture to the flour mix, and mix into a smooth dough. This usually takes about 5 minutes of mixing.Turn the dough out onto a lightly-flouredcounter and knead for about 5 to 10 minutes—it should feel springy and little bubbles should form under the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let rise for about an hour until double in size.Once risen, place the dough onto the counter and cut it into 4 pieces. One piece at a time, stretch it into a long rope about an inch to an inch and a half wide. Cut strips about an inch long, ball em up with your hands, and place them on a baking tray or wire rack to wait.Cover the doughnuts holes with a cloth to rise while you heat the oil to 375F.Place the doughnuts into the oil and fry until golden brown on each side, about 2 minutes. Be sure to fry only a few at a time so they don’t overcrowd and stick together.Drain on a paper towel or wire rack over a cloth, before glazing them. Be sure to glaze them warm, or else they won’t get that delicious coverage! Glaze: 1/3 cup butter 2 cups confectioners' sugar 1 1/2 teaspoons vanilla 4 tablespoons hot water or as neededA brief note: I recommend a scale, as not all flours (and cup measurements) are made equal. 2 cups of my Canadian flour in my Canadian cups on my scale might be more or less than yours. If you don't have a scale, start at 1 1/2 cups and work your way up from there.
