Jerky: Black Peppercorn: Beef or Venison Provided link uses Ale, Worchestershire and Soy Sauce with peppercorn: Another option I have used for years is to slice venison roast (or beef) marinade in 50% Worcestershire sauce 50% Terriyaki sauce overnight in frig, then remove meat / season with Lowery's season salt and dry in oven or dehydrator. Length of drying depends on desired texture.
