Coconut rice with coconut curry. Based on minimalistbaker.c... Make rice and add .5 cabs if coconut milk to cooking liquid. Fry one large onion, chopped carrots, chopped potatoes, grater ginger. Cup and a half of veggies. Cook stirring frequently for 5 hot minutes. -- now add can and a half of coconut milk, curry powder, cAyenne, and 1 cup of water, and salt. Add tomatoes and zuchini 1 cup. and garlic for the last 5 minutes. Serve with lemon and green onions.

Simple sweet spaghetti sauce with chili garlic basil oil and kale salad. Inspired by: www.yummly.com/... Also featured here: multiple sets of serving utensils so that no one has to wait. Here's the write up : -- Kale Salad -- Wash and spin the kale. Tear kale into desired size, remove big stems, and add to salad bowl. Toss the kale in olive oil, it will take a few minutes of tossing to get every leaf covered Press 3 cloves of garlic right into the salad bowl Squeeze a quarter lemon or lime into the bowl Sprinkle with balsamic vinegar Now toss together for another few minutes until the garlic has bee distributed around Let sit until ready to serve -- Garlic Basil Oil -- Chop six or so garlic cloves and half your fresh basil, six to ten leaves Heat a quarter cup of olive oil on low heat Toss garlic, basil, and a big pinch of chili flakes into the oil. Heat until clearly hot, and then continue simmering for at least ten minutes, or until garlic looks slightly brown. Shut off the heat and let it sit for a least 10 minutes, or until you are ready use it. Strain out the garlic and basil and keep just the oil. Drizzle onto pasta with a spoon when at the table. -- Fresh Tomato Sauce -- Chop a red pepper and toss into a pan of heated oil, two tablespoons. Let it fry for a while, 10 mins say, so that the red pepper gets a softer. Add a can of whole tomatoes, a big pinch of red pepper flakes, and some salt and pepper. Add two tablespoons of maple syrup. Add 1/2 cup of already-open wine if you have it, either colour, and totally optional. Stir and mash occasionally and let simmer and reduce for 25 mins. -- Perfect Pasta -- Boil pasta until not ready yet, pre al dente Drain and add cooked pasta to the sauce over medium-high heat Toss exuberantly while hot with a couple of wooden spoons, shake the pan, get the sauce to cover it all Add in chopped basil (10 leaves), parmesan cheese (2 handfuls), two tablespoons of butter Toss in the same enthusiastic manner. -- Cheese and Garlic Basil Oil -- Sprinkle parmesan and garlic basil oil onto the pasta on your plate.
