3 tbsp peanut butter 2/3 c coconut milk 2 tbsp maple syrup 1 to2tbsp sriracha 1 tosp sesame oil 3 tosp soy sauce 2 tosp grated garlic 1 tbsp grated ginger 1 lime, juiced 1 block extra or super firm tofu, drained, dried, & cut into cubes|oil, salt, & pepper as needed 1 handful cilantro, finely chopped 2 scallions, thinly sliced on the bias 1/2 cup crushed peanuts 1 tsp white & black sesame seeds 1 tbsp chili crisp oil rice for serving

Ingredients: 300g salmon For the crepes: 2 eggs 100ml milk 100ml spinach 50g flour Salt 150g champignons Salt Pepper 1 roll of filo pastry Procedure: Separate the salmon from the skin. Cut it into slices and arrange them on plastic wrap, squeezing them tightly at the edges to give it the shape of a roll. Blanch the spinach and stop cooking by immediately tossing it in cold water. Mix them with 2 eggs, milk, flour and salt and whisk. Pour the mixture into the pan to make crepes. Then chop the mushrooms champignons, and cook them in a pan with salt and pepper, let cool. Roll out the crepes then add the mushrooms,salmon,wrap. Wrap the roll in filo pastry and bake in oven at 175 degrees for 20 min.
