In saucepan, combine 1T unbleached all-purpose flour, ⅛ tsp ground nutmeg & pinch salt. Gradually whisk in 1c 1% milk til flour dissolves. Stir over med heat 5 min, til thickened. Remove from heat. Stir in 1c (4oz) shredded low-fat Cheddar cheese til smooth. Set aside. See site for last of directions.
