Easy Corn Dip Ingredients 4 cans mexicorn 2 cans rotel 1 cup sour cream 1 cup mayo 4 cups shredded cheddar cheese 4-5 green onions chopped Directions Combine all ingredients. Refrigerate for a few hours. (Its better the longer it sits in the fridge, I let mine refrigerate overnight.) Serve with tortilla chips.

Add potatoes, pour into large casserole dish. Bake at 400 degrees for 45-60 minutes or until top is lightly browned and potatoes are cooked thoroughly.
