CHILE RELLENOS CASSEROLE - to make low carb, use something besides the milk (1/2 cream and 1/2 water) and something besides the flour (almond or coconut flour or xanthan) - perfect for Cinco de Mayo!

Chile Rellenos Casserole - Made this and would not call it a chile relleno casserole since it doesn't taste like chile rellenos at all. It's more like a green chile casserole - kind of tex-mex, but not authentic mexican food.
