Greek Summer Salad: 2 Cucumbers (peeled/chopped), 2 pints Grape Tomatoes (sliced in half), 1 Red Pepper (chopped), 1 Green Pepper (chopped), 1/2 c. Green Onions (sliced), 1/2 c. Pitted Kalamata Olives (sliced), 1 1/2 - 2 c. Crumbled Feta Cheese, 3 T. Red Wine Vinegar, 1 T. Lemon Juice, 3 T. Olive Oil, Salt and Pepper. Directions: Combine all ingredients in a large glass, plastic or ceramic bowl -- toss to incorporate. Serve immediately, or cover and store in the refrigerator until ready to eat.

Healthy Chicken salad 1 1/4 cup plain, nonfat yougurt 1/2 cup grapes (cut in half) 1/2 cup apple (chopped) 1/2 cup chopped walnuts or almonds 2 cups cooked, chopped chicken. Mix yogurt, grapes, apples and nuts. combine chicken and yogurt mixture and place on top of salad.
one serving is only 81 calories! When making them for myself, I cut up one-half of a large sweet potato, toss the wedges with a little bit of olive oil, salt, and pepper, and bake at 400 degrees for about 20 minutes.
